Warm, creamy, Cheesy Baked Artichoke Dip with a wonderfully delicious spicy kick you'll love!  With a tasty combination of chopped marinated artichokes, melty cheese, and a bit of kick from green chilies and finely chopped pickled jalapenos, this delicious dip is just loaded with flavor.

In our family we have a habit or tradition (or whatever you'd like to call it) of referring to dishes after the person who gave us the recipe.  The dish becomes forever known to us as "so-and-so's whatever."

Like my absolute favorite Jean's Pizza.  And Kate's Chili.  Or Rosemary's Molasses Crinkles.  And Joe's Roasted Garlic Mashed Potatoes, even though no one in the family can even remember exactly who Joe is!

With a tasty combination of chopped marinated artichokes, melty cheese, and a bit of kick from green chilies and finely chopped pickled jalapenos, this delicious dip is just loaded with flavor.

And so in keeping with our family's "tradition," this Cheesy Baked Artichoke Dip should be called Jessica's Artichoke Dip, since this fabulous recipe was given to me by my dear friend Jessica.

But for the sake of the blog since no one would know who Jessica is, I decided to call this delicious hot dip Cheesy Baked Artichoke Dip with a Kick instead.

Why the added "with a Kick," you ask?

Because this warm, creamy, Cheesy Baked Artichoke Dip has a wonderfully delicious spicy kick we love!


The flavor "heat" from the green chilies and jalapenos pairs just beautifully with the artichokes and creaminess of the warm, cheesy base.

It's made with a tasty combination of chopped marinated artichokes, melty cheese, and a bit of kick from green chilies and finely chopped pickled jalapenos.  Which means this delicious dip is just loaded with fabulous flavor.

Whipping up a batch is super easy.

Simply mix together the chopped marinated artichokes, green chilies, and finely chopped pickled jalapenos with some chopped green onions for even more added flavor.  Be sure to thoroughly drain the marinated artichokes and green chilies to keep the baked dip from becoming watery.

Then also mix in shredded Monterey Jack cheese, Parmesan, and mayonnaise to form the dip's creamy base.

Spoon the mixture into a baking dish coated with non-stick cooking spray.  And then bake it up until the dip has some just-barely lightly browned areas on top and is nice and bubbly around the edges.

Then this Cheesy Baked Artichoke Dip with a kick is ready for diving in!

Serve it up hot straight from the oven with tortilla chips, some Fritos Scoops, or an assortment of crackers for dipping.

We just love this dip's spicy kick.  And my friend Jessica and I think you will, too.

Cheesy Baked Artichoke Dip with a Kick

Warm, creamy, Cheesy Baked Artichoke Dip with a wonderfully delicious spicy kick you'll love! With a tasty combination of chopped marinated artichokes, melty cheese, and a bit of kick from green chilies and finely chopped pickled jalapenos, this delicious dip is just loaded with flavor.

ingredients:

  • 2 (12 oz.) jars marinated artichoke hearts
  • 1 (4 oz.) can diced green chilies, drained
  • 2 tsp. chopped pickled jalapeno (or, to taste)
  • 3 green onions, chopped
  • 3/4 c. mayonnaise
  • 1 c. shredded Parmesan cheese
  • 1 c. shredded Monterey Jack cheese

instructions:

How to cook Cheesy Baked Artichoke Dip with a Kick

  1. Drain and coarsely chop the artichoke hearts. 
  2. Combine chopped artichoke hearts with all remaining ingredients.
  3. Spoon artichoke mixture into a baking dish lightly coated with nonstick cooking spray. Bake at 350 degrees for 25 to 30 minutes until bubbly around the edges. 
  4. Serve with tortilla chips, Fritos Scoops, and/or an assortment of crackers.
