Baked Artichoke Dip with a Kick

In our family we have a habit ... or tradition ... or whatever you want to call it ... of referring to dishes after the person who gave us the recipe.  The dish becomes forever known to us as 'so-and-so's whatever.'  Like my absolute favorite Jean's Pizza.  And Kate's Chili.  And Joe's Roasted Garlic Mashed Potatoes, even though no one in the family can even remember exactly who Joe is!

And so, in keeping with our family's 'tradition,' this Baked Artichoke Dip should be called Jessica's Artichoke Dip, since this fabulous recipe was given to me by my dear friend Jessica.  But since none of you would know who Jessica is, I decided to call it Baked Artichoke Dip with a Kick instead.

Why 'with a Kick,' you ask?

Well, because this Baked Artichoke Dip gets a wonderfully delicious flavor kick from diced green chilies and pickled jalapeno.  And, oh, this flavor 'heat' pairs just beautifully with the artichokes and creaminess of the warm, cheesy base.

Something else that pairs beautifully with the artichokes and creaminess of the warm, cheesy base of this dip are Green Giant's new veggie snack chips.

Didn't know Green Giant made chips??  ... well, they do!  Yup, we can now look for our favorite big green man in the chip aisle of the grocery store!  Check out your local store's chip aisle, or the Green Giant Veggie Snack Chips Facebook page, to see for yourself.  {Okay, is anyone else saying to themselves in their head "Ho, ho, ho ... Greeeeeeeeeen Giant,"?}

Green Giant recently sent me their two newest veggie snack chip flavors to try out ... Garden Ranch Roasted Veggie Tortilla Chips and Barbecue Multigrain Sweet Potato Chips.

My verdict?  Yummy.  I especially liked the Barbecue Sweet Potato Chips.  I'm a barbecue chip fanatic ... and these barbecue chips had a fantastic smoky-brown-sugar-barbecue-sauce flavor to them.  Mmm, mmm, mmmm.

As someone who tries to eat whole grain as much as possible {well, except in my baking ... I'm definitely a work-in-progress there}, I love that Green Giant's veggie snack chips are made with whole grains.

And the Garden Ranch Roasted Veggie Tortilla Chips were fortunate enough to get to experience Jessica's Baked Artichoke Dip with a Kick.

Just for the record, they enjoyed it.  Very much ... spicy green-chilies-and-jalapeno-kick and all.  And Jessica and I think you will, too.

Baked Artichoke Dip with a Kick

(Printable recipe)
  • 2 (21 oz.) jars marinated artichoke hearts
  • 1 (4 oz.) can diced green chilies, drained
  • 2 tsp. chopped pickled jalapeno (or, to taste)
  • 3 green onions, chopped
  • 3/4 c. mayonnaise
  • 1 c. grated Parmesan cheese
  • 1 c. grated Monterey Jack cheese
  1. Drain and coarsely chop the artichoke hearts. Combine with all remaining ingredients.
  2. Spoon artichoke mixture into a baking dish lightly coated with nonstick cooking spray. Bake at 350 degrees for 25 to 30 minutes until bubbly around the edges. Serve with tortilla chips and/or an assortment of crackers.
