Having gone to graduate school in upstate New York, I'm a huge fan of Buffalo wings. Given they originated in Buffalo, New York (hence their name), these deliciously flaming little bites were served absolutely everywhere in the area where I went to school.
In fact, they were very often a happy hour special. -- A happy hour special I was more than happy to indulge in. One place my friends and I frequented offered wings one afternoon a week for $0.10 each -- 10 cents! We went almost every single week, and I'm sure you can imagine that at that price, we sure indulged in more than our fair share of wings.
It's got all the flaming-Buffalo deliciousness of the classic wings, mixed with the creamy cheesy goodness of a hot baked dip.
There's just something about that combination of spicy cayenne pepper sauce, warm chicken, and cool blue cheese or Ranch dipping sauce that's just out-of-this-world delicious.
Since moving to the South, I haven't left behind my love for Buffalo wings. I still enjoy the spicy little devils just as much as I did as a student, frequently making our own baked buffalo wings with homemade blue cheese dressing for dipping at home.

I love that this Buffalo Chicken Dip is amazingly easy to make, taking just 5 simple ingredients and very little time to prepare.
All you need to whip up a batch is cream cheese, cayenne pepper hot sauce, Ranch dressing, shredded cheddar, and some cooked chicken.
For the cayenne pepper sauce, I am a die-hard Frank's RedHot fan. It's the only hot sauce I use to make my Buffalo wings -- and any other Buffalo-inspired treats. (Buffalo chicken pizza or Buffalo steamed mussels, anyone?) But use any cayenne pepper hot sauce you love.

For chicken, I buy a grocery store rotisserie chicken. Because it's easy.
Just chop up the rotisserie chicken meat, and you're good to go. That being said, you can certainly cook up some boneless chicken breasts or thighs and chop those up instead. Or, if you've got some leftover roasted chicken around, that'll sure work, too.
Some Buffalo Chicken Dip recipes call for canned chicken -- so that's fair game if you'd like, too. Canned chicken is just not my thing, and I'd much rather cook up my own chicken or grab a rotisserie chicken to chop.
Mix these together until well combined and smooth. I use an electric mixer because it makes really quick work of this step.
Then fold in about 2 & 1/2 to 3 cups of chopped fully-cooked chicken.
Spoon the cream cheese-chicken mixture into a baking dish, and top it with a layer of shredded cheddar cheese.
Pop it in the oven to bake up until it's hot and all bubbly around the edges.
Then you're ready with one bubbling hot pan of tasty Buffalo Chicken Dip, all set to be enjoyed.

ingredients:
- 2 (8 oz.) packages cream cheese, softened
- 1 c. Ranch dressing
- 3/4 c. Frank's Red Hot sauce (or other cayenne pepper sauce)
- 2 1/2 to 3 c. chopped Rotisserie or other fully-cooked chicken
- 1 1/2 c. shredded mild or medium cheddar cheese
instructions:
How to cook Buffalo Chicken Dip
- In a mixing bowl, beat together cream cheese, Ranch dressing, and hot sauce. Stir in chopped chicken.
- Spread mixture into a pie plate or other baking dish coated with non-stick cooking spray. Top with shredded cheddar cheese.
- Bake at 350℉ for 25-30 minutes until heated through and bubbly around the edges.
- Serve with tortilla chips, Frito Scoops, and/or celery and carrot sticks for dipping.
