It's no secret around here I love to create new versions of Yum Yum desserts.  Yum Yum is just such a deliciously creamy treat that seems to be loved by all.  And it's a pretty easy dessert whose base recipe lends itself well to tasty tweaks.

Jumping off from the ever-classic No-Bake Cherry Yum Yum and Blueberry Yum Yum recipes, I've created and shared perfect-for-summer Peach Yum Yum, fall-favorite Pumpkin Yum Yum, and most recently our absolute favorite No-Bake Banana Pudding Yum Yum.

So when my husband recently challenged me to create a Yum Yum for St. Patrick's Day, I didn't have to think twice about it.  Challenge immediately accepted.

I started off going the green route for my St. Patrick's Day Yum Yum creation, opting to try out a pistachio version.  But truth be told, I didn't love it.  It was good -- but not great.  And when it comes to the Yum Yum recipes I share, I want great.

So good it shouldn't be relegated to just St. Patrick's Day. -- This deliciousness should be enjoyed any day of the year!

So I turned to another fabulous St. Patrick's Day flavor -- Baileys Irish Cream.

Knowing a good bit of Yum Yum's filling is made up of a creamy whipped cream and cream cheese base, I took a nod from my Kahlua whipped cream recipe and figured Baileys would work in a whipped cream, too.

After just the first test bite of this Baileys Cookies & Cream Yum Yum filling, that thinking was confirmed.  Baileys, whipped cream, and cream cheese indeed combine beautifully to create one very tasty filling for this Baileys version of Yum Yum.

I combined the filling with an Oreo crust and crumble on top, and a layer of Baileys-laced chocolate pudding in the middle to create this decadently delicious no-bake dessert.  It's just a perfect creamy treat for the Baileys lover to enjoy on St. Patrick's Day.

But it's so good it shouldn't be relegated to just St. Patrick's Day. -- This deliciousness should be enjoyed any day of the year!

To make a pan of No-Bake Baileys Cookies & Cream Yum Yum, start by crushing some Oreos into crumbs to make the dessert's crust.

Be sure to crush the Oreos pretty finely.  Larger chunks of Oreo in the crust are difficult to cut through when serving this dessert.

With finely crushed Oreos, a knife breezes right through the crust when cutting.

Mix the Oreo crumbs with a little melted butter and press them into the bottom of a 9x9-inch baking dish.

Then whip up the Yum Yum's creamy filling.

Beat softened cream cheese and a little sugar.  And then mix in freshly-whipped Baileys whipped cream.

A good balance of Baileys and whipping cream is key to both the flavor and texture of this dessert.

I found a combination of 1 & 1/2 cups whipping cream and 1/3 cup Baileys Irish Cream liqueur is a good ratio for making the Baileys whipped cream.  These amounts bring a nice prominent Baileys flavor to the dessert, while also allowing the whipped cream to whip up to a nice texture.

More Baileys makes it a little tougher for the whipped cream to fully whip up and "hold" its shape.  Too much Baileys actually deflates the whipped cream.

Once the cream cheese/whipped cream mixture is prepared, spread about half of it evenly over the Oreo crust.

Then add a layer of Baileys-laced chocolate pudding.

Grab a box of instant chocolate pudding mix and whisk it together with some milk and Baileys.  Just a touch of Baileys in the pudding infuses it with a really nice Baileys flavor and carries that flavor throughout each and every bite of this Yum Yum.

Only use 1 & 1/4 cups milk in the pudding mixture instead of the usual 2 cups called for on the pudding mix package.  This is for 2 reasons:

1. We want the pudding to be a little thicker than usual so it makes a bit firmer layer in the finished Yum yum.

2. Adding Baileys to the pudding makes it set up less firmly than usual.  To accommodate this, reduce the amount of milk so the pudding still sets.

Once the chocolate pudding/Baileys mixture is whisked up, spread it over the Yum Yum's fluffy, creamy layer.

Then add on a second layer of the fluffy cream cheese/whipped cream mixture.

And finally cover the top with a sprinkling of coarsely crushed Oreos.

Keep the Oreo crumbles pretty chunky for the top -- not finely crushed, like for the crust.  I just crumble them with my fingers and drop the chunks on top.

Cover and refrigerate the Yum Yum for several hours or overnight before serving.  And truly Yum Yum desserts just get better and better in flavor with time, so I highly recommend the overnight chill time if you can.

Once the Yum Yum has chilled, you're ready to dive into its creamy layers.

And believe me, its Baileys-laced layers sandwiched between Oreo cookie crumbs definitely make for one decadently delicious dessert.  It's a perfect creamy treat for the Baileys lover to enjoy on St. Patrick's Day.

But No-Bake Bailey's Cookies & Cream Yum Yum is so good, it shouldn't be relegated to just St. Patrick's Day. -- This deliciousness should be enjoyed any day of the year!

ingredients:

Crust:
  • 1 1/2 c. finely crushed Oreo crumbs
  • 3 T. unsalted butter, melted
Cream Cheese Mixture:
  • 1 (8 oz.) package cream cheese, softened
  • 1/2 c. granulated sugar
  • 1 1/2 c. whipping cream
  • 1/3 c. Baileys Irish Cream liqueur, chilled
  • 1/4 tsp. vanilla extract
  • 3 T. granulated sugar
Chocolate Pudding Filling:
  • 1 small (3.4 oz.) package chocolate instant pudding mix
  • 1 1/4 c. cold milk
  • 3 T. Baileys Irish Cream liqueur, chilled
Crumb Topping:
  • 5 Oreos, coarsely crumbled

How to make No-Bake Baileys Cookies & Cream Yum Yum

Prepare the Crust:
  1. Crush Oreos into small crumbs in a gallon-size zip-top baggie with a meat mallet, or pulse them in a food processor until fine, to make 1 and 1/2 cups crumbs.
  2. In a bowl, combine Oreo crumbs with melted butter. Blend with a fork until crumbs are moistened.
  3. Press crumb mixture into the bottom of a 9x9-inch pan that's been sprayed with non-stick cooking spray.
Prepare the Cream Cheese Mixture:
  1. With an electric mixer, cream together softened cream cheese and the 1/2 cup sugar until smooth.
  2. In a separate bowl, whip the whipping cream, 3 tablespoons sugar, and vanilla extract until soft peaks form.  Add chilled Baileys Irish Cream and continue whipping until stiff peaks firm.
  3. By hand, mix together whipped cream and cream cheese mixture until well combined.
  4. Spread a little less than half the cream cheese/whipped cream mixture evenly over the Oreo crust.
Prepare the Chocolate Pudding Filling:
  1. In a mixing bowl, combine chocolate instant pudding powder and cold milk. Whisk until well combined and beginning to thicken.
  2. Add Baileys Irish Cream; whisk until well combined.
Assemble Remaining Yum Yum Layers:
  1. Drop prepared chocolate pudding filling by large spoonfuls on top of the cream cheese/whipped cream layer. Gently spread pudding evenly over the cream cheese/whipped cream layer, covering it completely.
  2. Top chocolate pudding layer with the remaining cream cheese/whipped cream mixture. Gently spread it evenly over the pudding layer.
  3. Sprinkle coarsely crumbled Oreos evenly over the top of the Yum Yum.
  4. Cover and refrigerate for several hours or overnight before serving.
TRACEY'S NOTES:
  1. When making the crust, be sure the Oreos are finely crushed.  Larger chunks of Oreo in the crust are difficult to cut through when serving this dessert.  Also, be sure to spray the pan with non-stick spray or the Oreo crust will stick to the pan.
  2. Chilling the Baileys helps it whip better when making the Baileys whipped cream.
  3. You can substitute an 8 ounce container of Cool Whip non-dairy whipped topping for the homemade whipped cream in the cream cheese mixture if you'd like.
  4. Sugar-free instant chocolate pudding works just fine in this recipe.
