Due to some recent health changes, my Mom has moved to a gluten-free diet.  But Mom has a big sweet tooth, and her new dietary habits haven't changed that one bit.  Our family is now always on the lookout for great gluten-free dessert recipes to try out.

So a few weeks ago or so, my daughter and I pulled out this Flourless Peanut Butter Cookies recipe to whip Mom up a little sweet treat.  It's actually a cookie recipe my Grandmother used to make that we had kind of forgotten about.  But out of the archives it came!  And I'm so glad we've resurrected this recipe at our house.


While these cookies have the bonus of being gluten-free for those who need it, they deliver up full-bodied peanut butter flavor all peanut butter fans will love.

These Flourless Peanut Butter Cookies deliver up super rich, full-bodied peanut butter flavor any peanut butter lover will love -- whether they specifically want a gluten-free cookie or not.  

Since they're made with just peanut butter, granulated sugar, a touch of baking powder, and an egg, be aware they are on the sweet side.  Which makes sense since there's no flour to tone down the sugar and peanut butter's sweetness.

But rest assured, it's a rich peanut buttery sweetness we adore.  And if peanut butter is one of your favorites, we think you'll adore it, too.

A lot!  But here are our top 4 things:

1.  Made with just 4 simple ingredients you're sure to have on hand -- The ingredients for these cookies are pretty much basic pantry staples, which means you can whip them up whenever that peanut buttery sweet craving hits.  Got granulated sugar, peanut butter, baking powder, and an egg on hand?  Then you're good to go!

2.  Rich, delicious, full-bodied peanut butter flavor -- Since there aren't a lot of other ingredients nor any flour in this recipe to mask or compete with the peanut butter, peanut butter flavor comes through loud and proud in these cookies.

Got granulated sugar, peanut butter, baking powder, and an egg on hand?  Then you're good to go!

3.  Bonus of being gluten-free for those who need it --  Since there's no flour and the cookies' other ingredients are gluten-free too, those needing a gluten-free diet can indulge away.

4.  Super easy to make -- Measure a couple ingredients, crack an egg, stir, roll dough into balls, and pop a pan in the oven ... that's all it takes to make these.  In fact, the ingredients come together so easily you don't even need to use an electric mixer if you don't want to.

To whip up a batch, start by mixing together granulated sugar, peanut butter, baking powder, and an egg to form a basic dough.  I do also include a small pinch of salt, but this optional if you'd like to leave it out.

Portion out 1 tablespoon of dough at a time and roll the dough into balls.  I use a 1-tablespoon cookie scoop to scoop the dough for each cookie.  The scoop makes measuring out the dough super easy.

Dip the top of each dough ball in granulated sugar and place it on a baking sheet.

Then flatten each dough ball with a fork dipped in granulated sugar (to keep it from sticking to the dough).

Turn the fork perpendicular to the first flattening-marks, and press the fork down into the cookie dough ball again.

This not only flattens the cookie for baking, the tines of the fork also create the characteristic peanut butter cookie cross-hatch pattern.

Flattening the cookie will cause shape distortion and some cracks along the edges of the dough.  And with these cookies, they don't change shape much when they bake -- they just puff up a tiny bit.  If the cracks are there when they go in the oven, they'll still be there when the cookies come out.

So use your fingers to gently reshape each flattened cookie and lightly press together any cracks in the edges.

Then pop the pan in the oven, and bake the cookies up for about 9-10 minutes.

ingredients:

  • 1 c. creamy peanut butter
  • 1 c. granulated sugar
  • 1 tsp. baking powder
  • 1 egg
  • pinch salt
  • about 2 T. additional granulated sugar (for dipping cookie tops)

instructions:

How to cook 4-Ingredient Flourless Peanut Butter Cookies

  1. In a mixing bowl, cream together peanut butter and the 1 cup granulated sugar. Mix in baking powder and salt.
  2. Add egg. Stir until well combined.
  3. Place the 2 tablespoons granulated sugar in a small bowl.
  4. Scoop 1 tablespoon dough at a time and roll into balls. Dip the top of each dough ball in granulated sugar and place on a baking sheet.
  5. Flatten with a fork dipped in granulated sugar; repeat with the fork turned perpendicular to the first marks to create a cross-hatch pattern. Use your fingers to gently reshape each flattened dough ball and press together any cracks in the edges.
  6. Bake at 350℉ for 9-10 minutes.
  7. Let stand on the baking sheet for 5 minutes before removing to a cooling rack.
TRACEY'S NOTES:
  1. I use a 1-tablespoon cookie scoop to scoop the dough for each cookie.  The scoop makes measuring out the dough super easy.
  2. This recipe yields soft cookies with a somewhat crumbly texture.  If you want larger softer cookies, use a 1 & 1/2-tablespoon cookie scoop -- keeping the baking time the same.

  2. Thanks for sharing this recipe. I have made these gluten free cookies before and they only
    had 3 ingredients but I couldn't remember what they were. It was peanut butter, egg and sugar
    but I only used half the sugar they used. They are delicious and I love that you are pretty
    much eating pure protein. Like that you made them in balls and rolled them in sugar and
    did the crosshatch on the top. This looks much easier than how I did them, so will use
    your method next time. Which will be soon.
