Some foods are straight-up party food classics.  You know, the ones that people just can't seem to get enough of and devour every last bite.

And indeed, Hot Crab Dip is certainly one of these classics!

It seems to be adored by all no matter when and where it's served.  Cheesy, warm, and creamy, and loaded with the fabulous flavor of crab, what's not to love?

Admittedly though, there are probably about as many variations of hot crab dip as there are people who make it.  Our family's hot crab dip recipe came from a family friend many, many years ago.  We got the recipe from her back way back when I was in high school, which was just over 30 years ago.

I guess needless to say, this is the hot crab dip recipe our family's been enjoying for a very very long time.

I love that its crab flavor is nicely complimented with a touch of horseradish and a hearty squeeze of fresh lemon juice.  Paired with assorted crackers for scooping, it's a wonderful perfect-for-a-party hot dip.

Not only is this hot crab dip loved by all those who eat it, it's also loved by those who make it ... because it's so easy to prepare.

Simply mix up a combination of softened cream cheese, fresh lemon juice, prepared horseradish, and a little bit of milk.  Then fold in canned crab.

Spoon the mixture into a baking dish ...

And then sprinkle on a little shredded cheddar cheese ...

I like to use a mild or medium cheddar because the mildness of the flavor goes well with the crab without overpowering it.  But certainly, you could use a sharp cheddar if you prefer.

Also, I like to shred my own cheese rather than using pre-shredded cheese from a bag.  Cheese I shred myself  seems to melt a little better than the packaged stuff and adds more creamy cheesiness to the baked dip.

Once the crab mixture is topped with cheese, bake it until it's heated through, bubbly around the edges, and just beginning to get some golden brown areas on the top.

Serve the baked crab dip immediately while it's hot.  If there do happen to be leftovers (which there probably won't be), the dip can easily be reheated in either the oven or the microwave.
