25 Foods for Cinco de Mayo Fun!

Oh, baby, with all the jalapenos flying around in these dishes, it's gettin' hot in here!  There is never a shortage of jalapeno peppers in our house ... they're a staple ... like, as much as flour, sugar, and milk it seems.  Though I have to admit, I didn't really realize how much of my cooking is Mexican-and-spicy-flavors inspired until I pulled together this Cinco de Mayo post.  We sure do love our spicy food!

If you love it too, here are 25 fabulous foods for some Cinco de Mayo fun!

... though there are a few sweet ones thrown in for good measure.  We've got to have our sugar dose, right?

1. Easy Restaurant-Style Salsa
This salsa whips up in no-time flat with the aid of a food processor or blender.  It's a family favorite, for sure!

2. Pico de Gallo
Mark ... my hubby ... absolutely loves pico de gallo, devouring like ten bowls when we go out to a Mexican restaurant.  Okay, okay ... maybe it's only like three bowls, but you get the point ... he loves the stuff.  This is our at-home version ~ any time I make it it's gone in a flash.

3. Black Bean Salsa
A colorful and tasty salsa that gets it's zing from fresh jalapenos and red wine vinegar ... great as a simple salsa, salad, or side.

4. Peach-Pineapple Salsa
I created this salsa after one of our summer peach-picking trips.  The peach-pineapple-&-spice flavor combination is a winner, indeed.

5. Roasted Corn, Black Bean, & Mango Salsa  {Tracey's Top Pick}
It was super tough to pick my favorite from this Cinco de Mayo list ... but ultimately, my favorite is this Roasted Corn, Black Bean, & Mango Salsa.  This stuff is just sooooo good.  The sweetness of the mango and roasted corn pairs so well with the smoky spicy-ness of chipotle peppers.  Enjoy this one with chips, as a salad, or spooned over chicken or fish dishes.  It's dee-lish.

6. Blueberry Salsa
Not your typical salsa!  Blueberries, fresh basil, and fresh cilantro create an unexpectedly delicious flavor combination.

Love jalapeno poppers?  This baked version brings on all the flavor, without the deep-fried guilt.

Goodness, this is such a great dip.  Using canned Mexicorn makes baking this up so easy, and gives the dip amazing flavor.  It's always the hit of the party!

Classic red-wine sangria is just perfect for Cinco de Mayo and for summer sippin'.

Prefer white wine over red {like me}?  This White Sangria will be right up your alley!

11. Kiwi Sangria Popsicles
For a truly unique sangria twist, try it in frozen form!  It's popsicles, all grown up.

12. Sweet-&-Spicy Pork Tenderloin with Mango Salsa
This pork tenderloin, marinated in a mixture of brown sugar and spice, is a go-to dish in our house.  It pairs just beautifully with fresh mango salsa.  {But it's also great on it's own if you're not in a mango kinda mood.}

13. Tamale Pie Casserole  {Mark's Top Pick}
Mmmmmmm ... spicy ground turkey and sausage filling topped with moist and tender cornbread ... so good it's Mark's favorite in this Cinco de Mayo collection!  Truth be told, it's one of my favorites, too.

These freezer-friendly enchiladas are a great make-ahead dish to feed a crowd.  My Mom used to make a couple of huge pans of them and pop them in the freezer to have on hand when my brother and I were home visiting from college.  That way she was ready when we showed up for dinner with all our friends in tow!

Another go-to recipe in our house ... and the ingredients can so easily be changed up to suit personal preference.

I got the roasted corn idea for this chicken salad from my all-time favorite Roasted Corn, Black Bean, & Mango Salsa recipe.  Turns out roasted corn is great in chicken salad, too!

These shrimp melts are a great option for 'sandwich night!'  And they're quick and easy, too.

Umm, just look at that ooey-gooey cheese??  It makes me want one of these delicious grilled cheese sandwiches right now!  And these can be made with roasted fresh jalapeno peppers, or a 'cheater' method that's faster but just as tasty.

Okay, until I made these grilled cheese sandwiches, I had no idea sharp cheddar cheese and guacamole were such a wonderful flavor combination!  Truly surprisingly good.

Another recipe that gives a nod to my all-time favorite Roasted Corn, Black Bean, & Mango Salsa ... this time I 'borrowed' the chipotle-mango flavor combination idea.

22. Margarita Cake Ball Truffles   {Readers' Top Pick by Clicks}
Who says Margaritas can only come in liquid form?  Not I!  They're quite tasty as cake ball truffles, too.  And apparently you all think so, as well, 'cause this is the most-viewed post in this collection!

Want a Margarita sweet treat that's bigger than the two bites of a truffle?  How about cupcakes!  Hint-of-lime cupcakes are topped with a scrumptious Margarita buttercream.  Yum.

Oh, gracious, I love sopapilla cheesecake!  And Dorothy from Crazy for Crust makes it look so totally fun in hand pies!  I won't even need a fork.  Sweet!

Okay ... I'm throwing in a bonus 26th thing 'cause I just couldn't resist these yummy looking margaritas ...

26. Coconut and Lemongrass Margarita by Pineapple and Coconut
Oh.  My.  Goodness.  These Coconut & Lemongrass Margaritas look sooooo creamy and delicious.  And, seriously, how much do I love that toasted coconut rim??  {A whole, whole, whole bunch.}
