I made this the other night, and to be honest, I truly wasn't sure how it would go over with our 9-year-old.  She's not all that into spicy foods.  Her Dad and I? - Oh, we love the spice!  But our daughter can be a little picky about it.

When I placed the pan of Cheesy Fiesta Corn Casserole on the table, our daughter eyeballed it apprehensively, but with some coaxing finally agreed to give it a try.  I'm glad to say, she liked it!

Because while this dish does have a kick to it, the spiciness isn't over-the-top spicy.  Its got just a hint of heat.  Most of the heat comes from chopped pickled jalapeno - and that spiciness can be turned up or down to suit your personal taste, simply by adjusting the amount of jalapenos you put in.

This Cheesy Fiesta version of corn casserole uses a combination of canned regular whole kernel corn and Mexican corn (sometimes called Mexicorn or Fiesta corn) seasoned with red & green peppers, with a little pickled jalapeno, chopped green onion, and a whole lot of shredded cheese.

I use a mix of both cheddar and Monterey Jack cheese.  Cheddar brings rich cheesy flavor, while the Monterey Jack brings nice creamy meltiness. 

And believe me, Cheesy Fiesta Corn Casserole truly couldn't be any easier to prepare.

Simply drain the canned corn and place it in a baking dish.  Then stir in some milk, cream cheese, green onions, chopped jalapenos, and a bit of hot sauce.

In a small bowl, toss the shredded cheese with a little bit of flour.  The flour will act as a thickener for the casserole as it bakes - and tossing it with the cheese helps disperse the flour evenly throughout the casserole mixture.

ingredients:

  • 2 c. shredded cheddar cheese
  • 1 c. shredded Monterey Jack cheese
  • 2 T. all-purpose flour
  • 1/2 tsp. black pepper
  • 3/4 c. milk
  • 4 oz. cream cheese, softened
  • 2/3 c. sliced green onion, divided
  • 1 tsp. hot sauce
  • 2 (15.25 oz.) cans whole kernel corn, well drained
  • 2 (15.25 oz.) cans whole kernel Mexicorn or Fiesta Corn with red & green peppers, drained
  • 1/2 T. to 1 T. chopped pickled jalapeno {about 4 to 6 slices}
  • chopped fresh cilantro for garnish {optional}

How to cook Cheesy Fiesta Corn Casserole

  1. Toss shredded cheeses, flour, and pepper together in a small bowl. Set aside.
  2. Combine milk, cream cheese, 1/3 cup green onions, hot sauce, and chopped jalapenos in a 9x13-inch baking dish. Add corn and shredded cheese mixture; stir until well combined.
  3. Cover and bake at 350 degrees for 30 minutes. Uncover, sprinkle with remaining 1/3 cup green onions, and bake 5 minutes more.
  4. Sprinkle with chopped cilantro, if desired, just before serving.
