So, I've recently started doing Zumba.  Yup.  And I don't really like to exercise, so that's a big deal.

Seriously, it's totally amazing for me.  'Cause exercise is truly just not my thing.  But, alas, sometimes we just need to do things that are good for us, like it or not.  So I took the plunge into Zumba, and much to my surprise, I actually even like it!

One big help? ... MUSIC!  I love music, so the fun up-tempo songs keep me motivated and movin'.  You'll crack up at what my favorite Zumba song so far is, though ...

... because it's so totally me.  Mmm, hmmmm ... it's called CHOCOLATE.  I know, shocker that I would love a song called Chocolate.  Want to give it a listen?  Here it is!  It's a fun one.


In our Zumba class, we do a lot of salsa-style dance moves, with a whole lot of hip shakin'.  Well, let me just tell ya, I would not do well on Dancing With the Stars, 'cause this booty and these hips are seriously lacking in the hip action department.  My booty does much closer to a little side-to-side wiggle than a hip-action salsa shake.

Oh well.  I'm still exercising.  And I'm still having fun ... hip action or not.

I've decided I'm much better at the kitchen-type salsa than the dancin'-type salsa.


So, I bring you my latest salsa creation (from the kitchen ... 'cause I don't think you want to see the dancin') ~ Black Bean Salsa.  

This salsa is packed full of fresh veggies mixed in with the black beans, and gets a bit of zing from red wine vinegar.  We love the flavor of the red wine vinegar, but if you'd like a more traditional salsa 'base,' substitute fresh lime juice instead.

Enjoy this from-the-kitchen-type salsa! ... and now close your eyes, 'cause I'm about to turn on some music and do some not-so-pretty booty-shakin' dancin'-type-of-salsa, Zumba style.

Yield: about 4 cups

Black Bean Salsa

Black Bean Salsa

Fresh veggie-packed Black Bean Salsa gets a little zing from red wine vinegar. Great with chips or as a simple side.

Ingredients:

  • 1 (15 oz.) can black beans, drained & rinsed
  • 3/4 c. finely chopped tomato
  • 1/2 c. finely chopped red onion
  • 1/2 c. finely chopped red bell pepper
  • 1/4 c. chopped cilantro
  • 1 tsp. finely chopped jalapeno
  • 1/3 c. red wine vinegar
  • 1/2 tsp. ground cumin
  • 1/8 tsp. salt

Instructions:

  1. Combine all ingredients and mix well. 
  2. Adjust salt, to taste.
  3. Cover and chill about 30 minutes before serving.  Serve with tortilla chips for dipping, or as a side salad.

  2. You again! :-) I copied the great black bean recipe while listening to the song. It is great! Even I could get inspired to move with music like that - and probably throw my bad hip out and then have to have hip replacement surgery. Look what you might be responsible for! LOL I've gotta look up Zumba now.

  8. I love this salsa. I make a lot during the summer when the home grown tomatoes are plentiful. I throw in some frozen corn sometimes.
