It's almost strawberry season in my neck of the woods!  And I.  Can't.  Wait.

I absolutely love fresh-from-the-field strawberries, eating most of them "straight-up."  Just a quick little rinse ... and then a big ol' bite into the sweet, juicy goodness.  Yes, it's my favorite way to enjoy strawberries, for sure.

With just a quick mix of 5 simple ingredients, this refreshing dip comes together in a flash.

But sometimes I do want to jazz my strawberries up just a bit.  Like, with a really simple, flavorful dip.  And this easy little Lemon-Poppy Seed Dip sure fits that bill!

I found this recipe in our local herb society's cookbook, and I just couldn't resist trying it out.  I mean, the flavor combination of the classic lemon and poppy seed bread in a fun dip form?  Yes, I had to try it, for sure.

With just a quick mix of 5 simple ingredients ... sour cream, fresh lemon juice, lemon zest, honey, and poppy seeds ... this refreshing dip comes together in a flash.  Then just chill, and dip.  Sweet.

The zing of the fresh lemon with the sweetness of fresh strawberries is a fabulous pairing!

We did try this dip with other fruits for dipping, and simply didn't like it as well.  We suggest strawberries as the dippers of choice.

Enjoy this tasty dip as a great snack, or as a simply wonderful simple nibble for entertaining.  Garnish a bowl with lemon zest curls, and serve alongside a platter of bright red fresh strawberries for a beautiful presentation.

It's a pretty little dip, isn't it?

Lemon-Poppy Seed Dip with Fresh Strawberries

ingredients:

  • 2/3 c. sour cream
  • 4 tsp. honey
  • 1 T. fresh lemon juice (approximately 1 lemon)
  • 1/2 T. poppy seeds
  • 1 tsp. lemon zest
  • fresh strawberries for dipping

instructions:

How to cook Lemon-Poppy Seed Dip with Fresh Strawberries

  1. Combine sour cream, honey, fresh lemon juice, poppy seeds, and lemon juice in a small mixing bowl. Stir to blend thoroughly. 
  2. Chill for about 1 hour before serving.
  3. Serve with fresh strawberries.
