I'm going to date myself here, but in high school one of my absolute favorite movies was "Pretty In Pink."  I mean, what teenage girl of the '80s could resist those iconic girl-meets-boy brat-pack love stories?  Especially when a prom and puffy pink prom dresses were involved!

To this day ... some 30 years later ... I'm hard-pressed to see something all dressed up in pink without thinking of the movie's theme song of the same name.  Or of Duckie's sweet silliness.

And such is the case with these pretty-in-pink Strawberry Cheesecake Strawberry Bites ... all decked out beautifully with strawberry cheesecake, complete with an embellishment of pink and white sprinkles.  

These pretty little pink beauties are the perfect treat for so many occasions ... Valentine's Day, Easter, spring, Mother's Day, a tea party, brunch, dessert, snack ... you name it!

I can't be the only who hears The Psychedelic Furs "Pretty in Pink" song running through my head at the sight of them, can I?

Simply start with some large fresh strawberries cut in half.  Leave the leaf cap on as a little 'handle' to hold onto ... and because it looks extra pretty that way.

Place the strawberry halves, cut-side-up on a platter.  If the berry halves don't sit level, cut a very tiny slice from the rounded side of the strawberry to give it a flat spot to sit on.

Make an easy strawberry cheesecake mixture with cream cheese, strawberry jam, confectioner's sugar, and a bit of almond extract ...

... and use an extra large piping tip to pipe the cheesecake mixture onto each strawberry half.  I like to use a disposable piping bag for super easy clean-up.

Then top off with a sprinkling of white non-pareil sprinkles and pink sanding sugar.

And hey, if you want to enjoy them while wearing a puffy pink prom dress, dreaming of Duckie or Blane, and watching '80s movies?  ... I certainly won't judge.

Strawberry Cheesecake Strawberry Bites

Topped with an easy cheesecake mixture made with strawberry jam, Strawberry Cheesecake Strawberry Bites make a fabulous little-bite dessert or treat perfect for Valentine's Day, Easter, Mother's Day, spring, a tea party, or every-day snacking!

ingredients:

  • 10 large strawberries
  • 4 oz. cream cheese, at room temperature {do not substitute 1/3-less fat cream cheese}
  • 2 T. strawberry jam {do not use strawberry preserves ... the strawberry chunks get stuck in the tip when piping the topping onto the strawberries}
  • 1 1/2 T. confectioner's sugar
  • 1/8 tsp. almond extract
  • 1 drop pink food coloring gel or paste {optional}
  • white non-pareil sprinkles and/or pink sugar sprinkles

instructions:

How to cook Strawberry Cheesecake Strawberry Bites

  1. Place softened cream cheese, strawberry jam, confectioner's sugar, and almond extract , and pink food coloring {if using} in a small bowl; stir until well combined and smooth. Chill for about 10 to 15 minutes.
  2. While cream cheese mixture chills, rinse strawberries and pat dry with paper towels. Leaving leaves on, slice each strawberry in half lengthwise and set aside on a plate or serving platter with the cut side up. {If strawberry halves do not sit level on the platter, cut a very tiny slice from the rounded side of the berry half to create a flat spot for it to sit upon.}
  3. Spoon cream cheese mixture into a piping bag fitted with an extra large star tip. {If you don't have a piping bag, you can use a zip-top baggie. Cut off one of the bottom corners of the bag and use it to pipe through.} Pipe cream cheese mixture onto each of the strawberry halves.
  4. Top each strawberry half with white non-pareil sprinkles and pink sugar sprinkles. Serve immediately or refrigerate for up to about 3 hours.
TRACEY'S NOTES
  1. Do not substitute 1/3-less fat cream cheese. The strawberry cheesecake mixture is not firm enough to hold on the strawberries when made with 1/3-less fat cream cheese.

  15. These are so good! They are now tradition for us to serve with our Valentine "brinner" (breakfast for dinner) along with heart shaped cinnamon rolls and bacon. My daughter, who is 8, makes these by herself and is so proud to present these at the table.

  23. Hi Tracey, any advice you could give me about the cream cheese. In the UK our cream cheese isn't as solid and so when I add the jam it goes very runny, even after being in the fridge. Any ideas please? They still taste delicious and were a big hit with the family! Thanks
