Berry season is coming!

One of my favorite times of year here in North Carolina is strawberry season.  There simply is just nothing quite like the strawberries of spring, picked fresh right out of the field.  They are perfectly ripe all the way through, juicy, and just sweet as can be.

I'm fortunate to live in an area with a plethora of strawberry farms, with three u-pick fields within about 5 miles of my house.  Oh, how I'm itching to get out there and pick some tasty little beauties!

And then itching to whip up a few more batches of this Fresh Strawberry Crisp.  Or Strawberry Cobbler.  Or Nutella-Strawberry Cheesecake Bites.  Or Strawberry Pudding ... I'm not fussy when it comes to enjoying my berries.

But my new favorite way to enjoy beautiful strawberries?  Fresh Strawberry Crisp, by far!  So when it came time to pick my recipe to share in this berries challenge, it was pretty much a no-brainer.

To make this easy dessert, simply start with some sliced fresh strawberries ...

Mix the berries with a bit of cornstarch, sugar, fresh lemon juice, and lemon zest.

And then top them with an easy-to-make crumble of old-fashioned oats, flour, brown sugar, and melted butter.

It's best to use a fork to sort of "cut" the ingredients together into crumbs ... you want it to stay lumpy and bumpy.  

To get a good crunchy texture for the crisp, be careful not to mix the crumble topping too much.  It's best to use a fork to sort of "cut" the ingredients together into crumbs ... you want it to stay lumpy and bumpy.

If it's mashed together into more of a pasty texture, it will bake up more like a dough on top of the strawberries ... instead of the crunchy'ish texture wanted for a crisp.

Then scatter the oat crumbles all over the top of the strawberries in a baking dish, and bake everything up until the berries are all bubbly along the edges and the topping is a light golden brown.

Pretty easy, right?

And pretty tasty, too!  This one got an "It's deeee-licious!" from our Little Miss H, who happily devoured several bowls from this batch ... and probably would have gobbled up the entire pan if I'd have let her.

Serve it up warm or cold, topped with a dollop of whipped cream or scoop of vanilla ice cream, for one perfectly simple, perfectly delicious dessert the whole family will love.  Especially those strawberry lovers like me!

Fresh Strawberry Crisp

Fresh Strawberry Crisp is one perfectly simple, perfectly delicious dessert for strawberry lovers. Keep this easy recipe on hand, for sure, to enjoy during berry season and all year round!

ingredients:

  • about 5 c. sliced strawberries {approximately 32 oz.}
  • 2 T. cornstarch
  • 1/3 c. granulated sugar
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. finely minced lemon zest
  • 1 c. all-purpose flour
  • 1 c. old-fashioned oats
  • 3/4 c. brown sugar
  • 1/8 tsp. ground cinnamon
  • 1/2 c. butter, melted

instructions:

How to cook Fresh Strawberry Crisp

  1. Place sliced strawberries in a large bowl, set aside. Whisk together cornstarch and sugar; sprinkle over berries and toss together. Add lemon juice and lemon zest; toss together.
  2. Place in a 9x13” baking dish that has been sprayed with cooking spray.
  3. Combine flour, oats, brown sugar, and cinnamon in a bowl. Add melted butter and toss until well combined {mixture should be lumpy and bumpy … don’t mash it together to make it smooth}. Sprinkle topping evenly over blueberries.
  4. Bake at 350 degrees for 45 minutes or until berries are bubbling vigorously along the edges and topping is golden brown.
  5. Serve warm or cold, topped with whipped cream or vanilla ice cream, if desired.

  5. We will be in England during the peak of strawberry season and they have the sweetest strawberries in my opinion and this scrumptious dessert would be the perfect vehicle for all those juicy berries! YUM!

  10. This was out of this world amazing! Perfect amount of sweetness. I didn’t have the vanilla bean. I imagine it would add so much more to such awesomeness!
