My husband has a new favorite cookie, thanks to this Peanut Butter Chocolate Chip Cookies recipe. I've made these several times in the last couple of months since first trying them out, because the hubby keeps requesting them.
And why does he keep requesting them? -- Well, for one, because he loves them. And two, because he likes to eat them for breakfast!
I guess if you're going to eat cookies for breakfast, at least these have a tiny bit of protein from the peanut butter, right?
These cookies have the texture of chocolate chip cookies, while being chock full of the peanut butter and chocolate combination we love.
Now as for me, I'll keep my cookies reserved for snacks and desserts -- and keep my breakfast to regular breakfast food. But to each his own.
I'll admit, when I was first trying out this Peanut Butter Chocolate Chip Cookies recipe I was concerned how the cookies' texture would turn out. I prefer my cookies soft and tender -- the texture of your basic chocolate chip cookie (when cooked on the under-baked side) is perfect for me.
With the addition of peanut butter to the mix, I was initially concerned the cookies would be a little dry and crumbly. I've seen that happen with some peanut butter-based cookies.
I'm happy to say dry and crumbly is not the case with these. These Peanut Butter Chocolate Chip Cookies bake up with the soft and tender texture of regular chocolate chip cookies. And we love that.
As for peanut butter flavor, these cookies have a fairly mild peanut butter flavor. It's there, for sure. But peanut butter doesn't just smack you in the face with every bite.

Whipping up a batch of these peanut butter chocolate chip beauties is just as easy as making a batch of regular chocolate chip cookies. The dough and process is pretty much the same, with the addition of peanut butter creamed in the first step with the butter and sugars.
Once the dough is mixed and scooped, I have a little step I like to do with all my chocolate chip-based cookies.
To get nice and pretty chocolate chip-studded cookie tops, and (let's be honest) to add even more chocolate to the finished cookies, I always embed a few extra chocolate chips in the top of each dough ball after it's scooped.
Just scoop the dough onto the cookie sheet, and then gently press a few chocolate chips on top. Maybe like 4 or 5, depending on how many chocolate chips are already showing themselves on the surface of the dough.
Press the chocolate chips down just slightly to embed them in the dough.
When the cookies bake up? -- The dough bakes around just the edges of those extra-added chocolate chips leaving them exposed, and giving the cookies a really pretty chocolate chip-adorned surface.
Not to mention, the extra few nibbles of chocolate is a nice touch, too.
Enjoy them for a fabulous afternoon snack or dessert nibble, like me. Or hey, as your new favorite breakfast treat like my husband. It's all good.

Peanut Butter Chocolate Chip Cookies

Ingredients:
- 3/4 c. butter, softened
- 1/2 c. creamy peanut butter
- 1 c. granulated sugar
- 1 c. brown sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 1/2 c. all-purpose flour
- 1 (12 oz.) package semi-sweet chocolate chips
Instructions:
- Combine flour, baking soda, and salt; set aside.
- In a large mixing bowl combine, butter, peanut butter, granulated sugar, and brown sugar; beat until creamy, about 2 to 3 minutes. Beat in eggs and vanilla extract.
- Gradually add the flour mixture; mix until combined. Stir in chocolate chips.
- Drop dough by about 1 & 1/2 tablespoon rounded scoops onto a cookie sheet. Bake at 350℉ for 9 to 10 minutes.
- Remove pan from the oven and let the cookies stand on the pan for about a minute before removing to a cooling rack.
