At our house, there are some snacks I just get begged to make -- like Baked Pizza Dip, Strawberry Cheesecake Strawberry Bites, and our family-favorite 3-Ingredient Crescent Sausage Bites.  And can you guess what the newest addition to that list is? --  These Cheesy Taco Tortilla Roll-Ups.  Yes, they have officially joined the list of begged-for favorites.

Their cheesy taco deliciousness is especially popular with our 10-year-old daughter, who loves to gobble them up for lunch or her mid-afternoon snack.  But truth be told, she'd eat these tasty little bites any-old time of day, I'm sure.

I started making Cheesy Taco Tortilla Roll-Ups a while back as game day nibbles.  Since they're prepared ahead and chilled, they're really convenient to make as a party or game day bite.  Just prep the tortilla roll-ups in advance, and cut them into individual bite-sized pieces at serving time.

In addition to great flavor and make-ahead convenience, Cheesy Taco Tortilla Roll-Ups are easy to make, too.  What more could you ask for in such a versatile and tasty little bite?

To whip up a batch, first fry together some ground beef, bulk sausage, and chopped onion.

Adding in a little sausage with the ground beef, rather than using ground beef alone, brings a nice richness of flavor to the roll-ups' taco filling.

Once the meat is cooked and drained, add in taco seasoning, garlic powder, sour cream, and cream cheese.  You can use a packet of store-bought taco seasoning or a couple tablespoons of homemade taco seasoning -- either one works great.

Stir this all together until it's well combined and the cream cheese has melted.

Then stir in a good dose of shredded cheddar cheese.

Place about 1/3 cup to 1/2 cup of the cheesy taco filling on each tortilla.

Then spread the filling to cover the entire tortilla.

If you'd like, you can sprinkle a little chopped fresh cilantro on top of the filling at this point.  I love these Cheesy Taco Tortilla Roll-Ups with the addition of cilantro, but our 10-year-old daughter prefers them without it.

Roll the filled tortillas up tightly.  Then wrap each tortilla roll up in plastic wrap and refrigerate them until they're chilled.

Once the roll-ups are chilled, slice them into 1-inch bites at serving time.  Pretty easy, right?

Ingredients:

  • 1 lb. ground beef
  • 1/2 lb. mild or hot bulk sausage
  • 1 c. chopped onion
  • 1 (1 oz.) package taco seasoning (or 2 T. homemade taco seasoning)
  • 1 tsp. garlic powder
  • 1 c. sour cream
  • 1 (8 oz.) package cream cheese
  • 1 1/2 c. shredded mild or medium cheddar cheese
  • 10 soft flour tortillas
  • salt & pepper
  • chopped cilantro (optional)

Instructions:

How to make Cheesy Taco Tortilla Roll-Ups

  1. Fry together ground beef and sausage over medium-high heat; season with about 1/8 teaspoon each salt and pepper while frying.  Drain grease.
  2. Reduce heat to medium.  Add onion and saute until softened, about 2-3 minutes.
  3. Add taco seasoning, garlic powder, sour cream, and cream cheese.  Stir until well combined and cream cheese is melted.
  4. Remove from heat.  Stir in shredded cheddar until melted.
  5. Place about 1/3 cup to 1/2 cup filling on each tortilla and spread to cover entire tortilla.  Sprinkle on chopped cilantro, if using.
  6. Roll up tightly.  Wrap each tortilla roll up in plastic wrap and refrigerate.
  7. Once chilled, slice into 1-inch bites.
