I'm always on the lookout for new "little-bite" snack recipes to add to our repertoire. I love to have quick and easy options to whip out for game day, since tasty snacks just seem to make the game even that much more fun to watch. And when those recipes can double for after-school snacks or lunch box bites? -- Well, that's even better!
These Veggie Taco Roll-Ups fit the bill on both accounts. -- They're fabulously flavorful little bites to snack on while watching the game, and they're portable and easy to pack in those lunchboxes, too. Which is especially nice with my non-sandwich eating 11-year-old. Needless to say, her sandwich-averse eating habits can make daily lunch packing a bit of a challenge. But thankfully, she's all about these taco roll-ups!

Eight ingredients is all it takes to make Veggie Taco Roll-Ups. To whip up a batch, you'll need:
- Cream cheese - The base of the roll-up filling.
- Sour cream - Brings creaminess to the filling, and helps it spread more easily.
- Taco seasoning - Brings the classic taco flavor. Use a store-bought packet, or make your own homemade taco seasoning. The 1-ounce package called for in this recipe is equivalent to 2 tablespoons of homemade mix.
- Black beans - The veggie cornerstone of these veggie-based roll-ups.
- Corn - Brings a nice bit of veggie sweetness in every bite.
- Salsa - Use your favorite. We use Pace Chunky Salsa, medium heat.
- Fresh cilantro - Adds fabulous flavor to the roll-ups. If you're not a cilantro fan, leave it out.
- Flour tortillas - Use 10-inch, soft taco-sized tortillas to make nicely-sized bites.
How to Make Veggie Taco Roll-Ups:
Veggie Taco Roll-Ups truly are easy to make. If you can spread butter and stir, you can whip up a batch of these tasty little bites.
To get started, first make the cream cheese-based filling.
In a mixing bowl, combine a block of cream cheese with some sour cream and taco seasoning, stirring them together until they're well mixed. Be sure to set the cream cheese out at room temperature in advance to soften so everything will mix together super easily.
Then stir in some corn, drained and rinsed black beans, salsa, and a little chopped fresh cilantro.
Place about 3 tablespoons of the filling mixture on each of eight flour tortillas, and spread it in an even layer to cover the entire tortilla. Roll the tortillas up tightly. Then wrap each tortilla roll in plastic wrap and refrigerate them overnight, or for at least 3 hours before serving.

Ingredients
- 1 (8 oz.) package cream cheese, softened
- 2/3 c. sour cream
- 1 (1 oz.) package taco seasoning mix
- 1 c. frozen corn, thawed & drained
- 1 c. black beans, drained & rinsed
- 1/2 c. chopped fresh cilantro
- 1/4 c. salsa
- 8 (10-inch, soft taco sized) flour tortillas
Instructions
- In a mixing bowl, combine cream cheese, sour cream, and taco seasoning. Stir until well mixed. Stir in corn, black beans, cilantro, and salsa until well combined.
- Place about 3 tablespoons of mixture on each tortilla and spread to cover entire tortilla.
- Roll up tightly. Wrap each tortilla roll up in plastic wrap and refrigerate overnight, or for at least 3 hours before serving.
- At serving time, slice into 1-inch bites.

- The 1 cup of black beans called for in this recipe is a little less than a 15-ounce can.
