Classic pickle dip is a creamy combination of chopped pickles, ham, and cream cheese.  And with these super tasty Pickle Dip Roll-Ups? -- That classic creamy pickle dip combination gets slathered on and rolled up inside flour tortillas to create one very tasty little bite.

And those handy-dandy tortillas make these bites a perfectly poppable grab-and-go treat for any pickle lover.  Whether it's as party fare, for afternoon snacking, as game day nibbles, or even as a fun lunch, Pickle Dip Roll-Ups are great to enjoy just about any time.

I, for one, am a huge pickle lover.  It's not unheard of for me to sit down to a big pile of kosher dill pickle spears as a snack.  And the zingier those dill pickles are? -- Oh, the better!  And don't even get me started on how much I love those huge whole-cucumber pickles.  Pickle nirvana, right there.

So naturally, a batch of these Pickle Dip Roll-Ups doesn't last long around our house.  And if you've got pickle lovers at your house, I highly doubt they'll last long around yours either.

But besides the fabulous pickle flavor, I also love that these super tasty roll-ups are also super easy to make.  With just a handful of simple ingredients and all of about 15 minutes hands-on prep, you can have a batch whipped up in a flash.

Pickle Dip Roll-Ups Ingredients

It doesn't take a whole lot of ingredients to whip up these little bites, which is a beautiful thing, for sure.  And those few ingredients it does take are pretty simple and basic -- nothing fancy here.  

To make a batch, you'll need:

  • Kosher dill pickles - It wouldn't be Pickle Dip Roll-Ups without the pickles, right?  Pickles are the star of these tasty bites.  Choose tangy kosher dill spears, not a sweet pickle variety.  You want that classic zip of kosher dills.  I'm partial to Mt. Olive brand since they're made in my home-state of North Carolina, but choose any brand of kosher dills you love best.  Sliced pickle chips would work in place of spears just fine, too.

  • Fully-cooked ham - Alongside pickles, ham is the other main ingredient of classic pickle dip.  The two pair beautifully to bring fabulous flavor to these bites. Dice some leftover ham, or get sliced packaged ham or deli ham at the grocery store and chop it up.

  • Cream cheese - Forms the creamy base of the roll-ups' filling.  I prefer full-fat regular cream cheese, but lower-fat Neufchatel cream cheese works just fine, too.

  • Onion powder & black pepper - A little dab of seasoning amps up the flavor of the filling.

  • Flour tortillas - Serve as the roll-ups' wrapper.  You'll need taco-sized tortillas for this recipe, not the smaller fajita-size or larger burrito-size.  Taco-sized tortillas are your basic, standard 8-inch or so tortillas.

How to Make Pickle Dip Roll-Ups

Pickle Dip Roll-Ups are super easy to make, and take all of about 15 minutes hands-on prep.  A small bit of chopping, a quick mix by-hand, and then spreading and rolling of the tortillas is all it takes.

Start by coarsely chopping the pickles.

Besides the fabulous pickle flavor, I also love that these super tasty roll-ups are also super easy to make.

I like to leave the pickles in pretty decent-sized pieces -- they give a nice crunch in the finished roll-ups that way.  Chop them more finely, if you prefer.

Then also chop up an equal amount of fully-cooked ham.

Stir together the chopped pickles and ham with softened cream cheese, a little onion powder, and a pinch of black pepper to make the pickle dip filling.

Divide the filling evenly between 7 flour tortillas.

Spread the filling in an even layer over each tortilla, leaving about a 1/2-inch border around the edge.

Then roll each tortilla up tightly, creating a spiral of filling.

Wrap each pickle roll-up in plastic wrap. (Or, place all the pickle roll-ups on a plate and cover the plate with plastic wrap). Then, refrigerate the roll-ups for 1 hour to let the flavors meld and allow the filling to firm up a bit.

Once chilled, unwrap the roll-ups and slice each one into 1-inch rounds.  You should get about 6 or 7 rounds from each roll-up.  The ends won't have a lot of filling in them, so nibble on those as you go or discard them.

Using a serrated knife to slice the roll-ups will give you the nicest, cleanest cuts.

Once you slice the roll-ups into bites, you'll see a nice spiral of filling speckled with those tasty ham and pickle pieces.  Pop them on a platter and serve them up!

Note, these Pickle Dip Roll-Ups are best enjoyed the day they are made.  They can absolutely be made ahead and refrigerated overnight or for several days before serving, just be aware the tortilla does soften as they sit.

Obviously, the longer the roll-ups sit, the softer the tortillas get as they absorb moisture from the cream cheese filling.

Ingredients:

  • 2 (8 oz. each) packages cream cheese, softened
  • 1 1/2 c. coarsely chopped dill pickle spears
  • 1 1/2 c. chopped fully-cooked ham
  • 1/2 tsp. onion powder
  • 1/8 tsp. pepper
  • 7 taco-sized flour tortillas

Instructions:

  1. In a medium-sized mixing bowl, stir together softened cream cheese, onion powder, and pepper.  Fold in chopped pickles and ham until well combined.
  2. Divided mixture evenly between the 7 tortillas.  Spread pickle mixture into an even layer on each tortilla, leaving about a 1/2-inch border along the edge.  Roll up tightly.
  3. Wrap each pickle roll-up in plastic wrap (or, place all pickle roll-ups on a plate and cover with plastic wrap). Refrigerate for 1 hour.
