It's National School Breakfast Week! ... A week dedicated to encouraging parents, students, and school staff to start mornings with a healthy breakfast. Whether that breakfast is served up at school or at home, a healthy start to the day is so important for little ones and grown-ups alike.
To help encourage a great start to the day, last week I shared hearty and healthy Savory Breakfast Bread Pudding. And today I bring you these super tasty, super easy Breakfast Banana Splits!
We don't do the whole school breakfast thing at our house. Our six-year-old little Miss H. and I choose to spend that time together at home, getting our day off to a {most of the time} great start together. I do love spending that breakfast time with my little Miss H.
I do my best each day to make sure her breakfast includes some hearty protein, a fruit, and some form of grain. I'm happy to say, these Breakfast Banana Splits are not only delicious and easy, they hit all those food components, too.
A couple scoops of vanilla Greek yogurt brings great protein, a banana and berries bring the fruit element, and a sprinkling of hearty granola brings nice crunchy grain, as well as a bit more protein, too.
For granola, I use Nature Valley Oats 'n Dark Chocolate Granola ... along with a tiny sprinkling of mini chocolate chips ... to bring a little touch of true banana split chocolatey-ness. The little touch of chocolate tastes fabulous with the yogurt, banana, and berries! And makes you feel like you're being a little bit indulgent at breakfast time.
Topping everything off with a little drizzle of honey is a nice touch, too, if you'd like ... kind of like adding caramel sauce to an ice cream-based banana split. But as with all the items on these splits, is completely optional. Change out whatever you'd like to suit your taste.
Now truth be told, the flavors of this Breakfast Banana Split are so yummy, I've been known to enjoy one for a totally tasty and satisfying dessert, too.
Either way, breakfast or dessert ... these banana split beauties will certainly give your day a great start ... or finish it up deliciously, too.

ingredients:
For each banana split:
- 1 banana
- about 1/2 c. vanilla yogurt {I used Cabot vanilla bean Greek yogurt}
- about 1/3 c. berries {blueberries, raspberries, blackberries, and/or chopped strawberries}
- about 3 T. granola {I used Nature Valley Oats 'n Dark Chocolate Granola}
- about 2 tsp. mini chocolate chips
- honey drizzle {optional}
instructions:
How to cook Breakfast Banana Splits
- Cut banana in half lengthwise and place on a plate {or in a banana split dish}, with the cut sides facing up. Spoon yogurt over the center of the banana.
- Sprinkle yogurt with berries, granola, and mini chocolate chips. Drizzle with honey, if desired.
