I love that this Breakfast Bread Pudding contains all four major food groups, making it a very well-balanced, nutrient-packed, wholesome breakfast.

It uses whole wheat bread as the base, which is then combined with eggs and REAL® cream or milk to form the bread custard part of the dish.  Lean turkey sausage adds protein ... though you could certainly use regular pork sausage if you'd like.

Cherry tomatoes, green onions, and fresh basil add a veggie component, as well as add amazingly wonderful flavor.

I know some people might be thinking the cherry tomatoes are a bit of a weird element in the dish, but believe me, they taste wonderful in this bread pudding!  If you're totally opposed to tomatoes for breakfast, though, simply leave them out.  While the dish won't be quite as eye-catching, it'll still taste great.

This dish is fabulous served fresh out of the oven, but also re-heats well, too.

 Of course, the last layer of fabulous flavor comes from a generous sprinkling of part-skim REAL® mozzarella cheese.

Oh, you've just got to love cheesy goodness, am I right?

Savory Breakfast Bread Pudding

Get your morning off to a great healthy and delicious start with this Savory Breakfast Bread Pudding. It's jam-packed with flavor from all the food groups!

ingredients:

  • 1 1/2 c. REAL® whipping cream {OR 1/2-&-1/2 OR milk}
  • 3 eggs
  • 2 T. chopped fresh basil
  • 6 slices whole wheat bread, cut into 1-inch pieces
  • 2 tsp. canola or olive oil
  • 8 oz. turkey {or pork} sausage
  • 3 green onions, thinly sliced
  • 1 c. cherry tomatoes
  • 1 c. shredded REAL® part-skim mozzarella cheese

instructions:

How to cook Savory Breakfast Bread Pudding

  1. In a large bowl, whisk together milk, eggs, and basil. Add bread and let mixture stand while you prepare the rest of the recipe, stirring occasionally, to allow bread to absorb most of the liquid.
  2. Place oil in a skillet and heat over medium-high heat. Add sausage, breaking it into crumbles; cook until no longer pink. Drain any grease and add cooked sausage to the bread mixture.
  3. Add green onions and tomatoes to the same skillet. Cook, stirring frequently, for 5 minutes. Add to bread mixture; stir to combine.
  4. Pour into a 7x11-inch pan or small baking dish coated with non-stick cooking spray. Sprinkle top evenly with mozzarella.
  5. Bake at 375℉ for 30 - 35 minutes until puffy and lightly browned.

  5. Do you use regular sandwich bread or something different? The first ingredients say or 1/2 cup of milk, is it supposed to be 1 1/2 c instead?

    1. We use regular sandwich bread. The recipe is for one and one half cups of whipping cream or one and one half cups of half and half.
