This is a sponsored post written by me on behalf of Simply Potatoes. All opinions are 100% mine.
Whip up this prepare-ahead Overnight Sausage, Egg & Hash Brown Breakfast Casserole and serve up a breakfast or brunch your family will love ~ all with a low-maintenance morning for you.

Overnight Sausage, Egg & Hash Brown Breakfast Casserole

I am a big fan of overnight breakfast and brunch casseroles.  I just love the convenience of putting together a delicious casserole the night before ... followed by the ease of serving up a piping hot breakfast the next morning by simply popping an-already-prepared dish in the oven.  What could be better?

Well ... how about preparation of a delicious night-before casserole that's even easier?  Like with the ease of this Overnight Sausage, Egg & Hash Brown Breakfast Casserole, thanks to  Simply Potatoes prepared Shredded Hash Browns.  With Simply Potatoes' ready-to-use shredded hash browns, there's no peeling and no shredding ... because the folks at Crystal Farms Company have already taken care of that for us.  Isn't that sweet of them?  Having already prepared the potatoes, they sure give us a head start on getting our breakfast or brunch ready.

Which I don't know about you, but in the morning? ...

I'll take all the help I can get.  {Yeh, morning is definitely not my strong point.}

Simply Potatoes Overnight Sausage, Egg & Hash Brown Breakfast Casserole

Fresh and never frozen, Simply Potatoes can be found in the refrigerated section of the grocery store ... in my local stores some varieties are near the meats, and some are in the dairy/eggs section.

To prepare this convenient, make-your-morning-easy Overnight Sausage, Egg & Hash Brown Breakfast Casserole, brown sausage in a skillet ... and then add the Simply Potatoes hash browns.  Cook the hash browns for just a few minutes.

Then, combine the sausage/hash brown mixture with eggs, milk, spices, cheese, and some cubed bread ... and mix it all up.  The cubed bread soaks up some of the egg and milk as the mixture 'rests' overnight, and bakes up super light ... giving the finished casserole a fabulous texture.  It's soooo fluffy and light!  And sooooo good.

Once everything's mixed together and friendly, pour the mixture into a greased baking pan, cover, and stick it in the fridge.

And when you get up in the morning and want to serve your family a deliciously hot-and-tasty breakfast or brunch? ...

Overnight Sausage, Egg & Hash Brown Breakfast Casserole

Bask in the glory that your prep is all done!

How easy and convenient is that  for a morning?

Pop the casserole in the oven ... bake it up ...

Overnight Sausage, Egg & Hash Brown Breakfast Casserole

... and there you have it! ... hot and tasty Overnight Sausage, Egg & Hash Brown Breakfast Casserole your family will love.  And ~ bonus ~  a low-maintenance morning for you.

  5. For some reason the selection of Simply Potatoes in my area varies wildly from store to store. Walmart only carries the hashbrowns, while another store only carries the diced potatoes and another only carries the mashed potatoes. It is almost like they got together and each decided to carry only specific products!!!
