Dill Pickle Bites

My husband is a dill pickle addict.  And, honestly, I'm not too far behind him on that.  We both adore them.  And these cute and crunchy little Dill Pickle Bites are such a fun and tasty way to enjoy them!

I had these for the first time about three years ago when someone brought a big platter of them to school for us teachers to snack on.  I had no idea what they were, except that there was a pickle in the middle.  And there's no way I can resist a dill pickle, so I just had to give them a try.

I discovered these little bites are pickles wrapped in smushed slices of white bread smeared with a layer of seasoned cream cheese.  Hmmmmmm, sounds a little funky ... but it's sooooooo good!

Addictively good.

Even if you're not a dill pickle addict.


Since the hubby and I are both dill pickle addicts, we obviously love these Dill Pickle Bites.

We also love them with a little twist to the original ... adding a layer of salami wrapped around the pickle, which was inspired by my Mom.


As a little snack when I was growing up, my Mom used to spread a bit of cream cheese on slices of salami and roll them up.  I loved these little quick Salami & Cream Cheese Bites!  Based on that snack, I figured why not try salami in these dill pickle bites?

Great idea, if I do say so myself.

Whipping up Dill Pickle Bites is pretty easy, too.  Who doesn't love a little bite that's both tasty and easy, right?

Start by mixing up a cream cheese filling flavored with a bit of dill and grated onion.  I find the easiest way to grate onion is with a rasp grater that I place right over the bowl.  If you don't have a rasp grater, a regular cheese grater will work.

Cut the crusts off slices of white bread {I used whole wheat white}, and roll the bread flat with a rolling pin.  Then spread it with the cream cheese mixture, and place a baby kosher dill pickle smack in the middle.



Then roll the pickle up all snug and cozy.

Refrigerate overnight so the flavors get all happy together, and then slice each pickle roll-up into individual dill pickle bites.



Mmmmmmm, serve up a platter of totally yummy Dill Pickle Bites.  So good, they're totally addictive.

Dill Pickle Bites

ingredients:

  • 1 (8 oz.) package cream cheese, softened
  • 2 T. mayonnaise
  • 1 T. grated onion
  • 1/2 tsp. dried dill weed
  • 1/8 tsp. ground black pepper
  • 12 baby dill pickles
  • 12 slices white bread {or white whole wheat}
  • Hard salami slices {optional}

instructions:

How to cook Dill Pickle Bites

  1. In a small mixing bowl, combine cream cheese, mayonnaise, grated onion, dill weed, and pepper. Mix until well combined.
  2. Cut crusts from bread slices and roll each slice flat with a rolling pin. Spread cream cheese mixture thinly on the bread slices, using approximately one tablespoon mixture per bread slice. Place a baby dill pickle on each and roll up.*
  3. Place seam side down in a glass baking dish. Cover and chill in the refrigerator 8 hours, or overnight.
  4. To serve, cut each pickle roll into three pieces.
TRACEY'S NOTES
  1. *If using hard salami slices, spread about 1/2 T. cream cheese mixture on a bread slice, top with a slice of hard salami, and spread with remaining 1/2 T. cream cheese mixture. Place the baby dill pickle on top of the second layer of cream cheese mixture, and roll up.

  3. I do enjoy dill pickles but I've never seen anything like those little bites. They look pretty tasty. I'm curious about the popcorn too. I've been experimenting with milder more common flavors like lime or garlic and black pepper. Dill Pickle flavored popcorn sounds pretty interesting. I'd try it at least once for sure.

    2. yes! thank YOU! someone finally agrees with me. I remember this treat with the dill pickle since school when a chef visited my 4th grade class and showed us how to make this easy snack. Ever since when I would make this, ppl would look at me like I'm weird. :)

  4. If you want a lower carb version, I dry a slice of ham spread with cream cheese and roll the pickle. Slice.

  19. Do these transport well? I'm seriously considering making some and just putting them in a little baggie to have in my lunch box for a snack at work. Does the bread get soggy at all?

    1. Hi, Liza! The bread softens ... it's supposed to ... but doesn't really get soggy. They do transport well, though I would suggest transporting them in a small plastic container or placed side-by-side wrapped in plastic wrap rather than loose in a baggy. I would think they'd kind of squish together if allowed to tumble around in a baggy. They would indeed make a great snack at work. Enjoy!

  28. We’ve beet making something very similar for many years! A big hit at parties and showers...sliced sandwich ham instead of bread, smeared with softened cream cheese (plain), and rolled up with the regular sized dill pickle in the middle. Refrigerate for a couple of hours and slice. My son always loved the “ends” that didn’t make the party tray. Very good low carb treat!
