I'm absolutely always on the lookout for super easy recipes that taste great.  And that is certainly the case with these Cucumber Pita Bites -- they're both super easy, and super delicious.

This recipe came to me by way of my sister-in-law.  We were at her house for Thanksgiving this past year, and she had whipped up a plateful of these tasty little bites for us all to nibble on while waiting on the turkey day bird to be done.

Do you want to know how fast that plateful of Cucumber Pita Bites disappeared? -- In all of about 5 minutes flat.  Slathered with a layer of seasoned cream cheese topped with a cucumber slice and fresh dill, these tasty little pita bites are hard to resist.

With just 5 simple ingredients and about 10 minutes of prep, these Cucumber Pita Bites come together in a flash.

Such a simple little concept.  But oh-so good.

The first plateful was devoured so fast, my sister-in-law grabbed out the ingredients and whipped up another batch on the fly -- all amidst working on her final Thanksgiving dinner preparations.  Yes, that's exactly how easy these bites are to make.

A big platter can be prepared in about 10 minutes, and less if you've already got the cream cheese spread mixed up.

Which makes Cucumber Pita Bites (or super easy cucumber sandwiches, as I also like to call them) an absolutely perfect party food or pre-dinner nibble.  They're great for a tea party, bridal or baby shower, game day snacking, Easter brunch, or --- heck, just about anything you can think of.

All it takes to make these adorable, tasty little bites is 5 simple ingredients:
  • Pita bread
  • A cucumber
  • A package of cream cheese
  • An envelope of dry Italian dressing mix, and
  • Fresh dill
That's it.

And the prep is really easy, too.  No cooking, minimal chopping, and just a very tiny bit of stirring to mix together the cream cheese spread.

The pita bites get the bulk of their flavor zip from a thin layer of seasoned cream cheese slathered on top of the pita bread.  The cream cheese spread is a simple mix of cream cheese and dry Italian seasoning mix.

You can find the dry Italian dressing mix with the other salad dressings in the grocery store.  Look for the envelope packets next to the Ranch dressing seasoning packets.

To whip up a batch of bites, start by stirring together softened cream cheese and a packet of Italian dressing mix until they're well combined.

The cream cheese mixture will taste quite salty on its own.  But don't worry -- once its combined with the pita and cucumber, the flavors work perfectly together.

You can prepare the cream cheese mixture in advance, if you'd like, and refrigerate until you need it.  Just be sure to get it out of the refrigerator and let it stand at room temperature for a while so it will spread easily when preparing the bites.  Just think of it like setting cream cheese out to soften -- it's the same principle.

Spread a thin layer of the cream cheese mixture on each pita.  Keep the cream cheese layer pretty thin, or the flavor of the cream cheese takes over a little too much.  You may not use up all the cream cheese mixture, and that's okay.  Save it to make more cucumber pita bites later, perhaps.

Leave about a 1/2-inch border without cream cheese around the edge of the pita.  This makes the pita bites much easier to pick up without sticking your thumb in cream cheese!

With a pizza cutter or sharp knife, cut the pita into 8 triangles -- pizza-style.

How to Make Cucumber Pita Bites Image

Now, a note about the pita bread -- We've tried this recipe with both traditional pocket pita bread and Greek-style pita, and we recommend traditional pocket pita bread.  

Both types work, but the textures of the pitas are quite different.  We find Greek-style pita to be too soft and bread-like in these bites, and prefer the firmer texture of traditional pocket pita.

Once the pita triangles are cut, top each one with a cucumber slice.

You can use either a regular or English cucumber, both work just fine.  If using a regular cucumber, look for a slim cucumber rather than a bigger one.  Sometimes with big cucumbers, the slices are too wide and hang over the edges of the pita triangles.  It's not the end of the world if that happens, though.

On the other hand, English cucumbers can sometimes be too slim and a slice seems too little for the pita triangle.  In that case, I've just put 2 slices of English cucumber on.

Finally, sprinkle each cucumber slice with a little fresh dill.  I just tear the dill with my fingers.  No need to even grab a knife and chop.

And that's it!  These tasty little beauties are ready to serve.  Easy as that.

A side note on garnishing.  Thinking it would taste and look good, I tried garnishing a batch of these bites with a sprinkling of black pepper -- don't do this.  After just a few minutes, the pepper discolors the cucumbers and cream cheese -- which really doesn't look so good at all.

I recommend sticking with just the fresh dill on top of the bites.  And along that line, I don't recommend skipping the fresh dill.  It gives the Cucumber Pita Bites a nice finished look, as well as adds nice flavor, too.

  • 1 package (6 or 8-count) pocket pita bread
  • 1 cucumber (English or regular), unpeeled
  • 1 (8 oz.) package cream cheese, softened
  • 1 (0.7 oz.) envelop Good Seasons dry Italian dressing mix
  • fresh dill

instructions:

  1. In a small bowl, stir together softened cream cheese and dry Italian dressing mix until well combined.
  2. Wash cucumber (do not peel).  Slice into rounds, approximately 1/8th-inch thick.
  3. Spread a thin layer of cream cheese mixture on a pita, leaving about 1/2-inch border around the outside.  Use a pizza cutter or sharp knife to cut the pita into 8 triangles.
  4. Top each pita triangle with a cucumber slice.  Sprinkle each cucumber slice with a little fresh dill.
  5. Repeat with remaining pitas.
  6. Serve immediately, or cover with plastic wrap and refrigerate for up to 4 hours before serving.
TRACEY'S NOTES:
  1.
