Who's a total sucker for tortilla roll-ups? Because believe me, I'm right there with you. And one of my absolute favorite roll-ups recipes is this one for Bacon-Ranch Spinach Roll-Ups.

These little bites are like eating creamy bacon-laced spinach dip in a wrap. And I'm absolutely down for that. Bacon, dry Ranch dressing mix, and spinach combine beautifully to create fabulous flavor. 

As an added bonus to great flavor, Bacon-Ranch Spinach Roll-Ups are really easy to make, too. Simply mix together an easy creamy filling, spread on tortillas, and roll. Refrigerate for 8 hours or overnight, and then slice the roll-ups into bites at the time of serving for a tasty little savory treat.

Bacon-Ranch Spinach Roll-Up Ingredients:

It takes just seven simple ingredients to prepare Bacon-Ranch Spinach Roll-Ups. To whip up a batch, you'll need:

  • Frozen chopped spinach - Two 10-ounce packages of frozen spinach make up the base of the filling. Drain the thawed spinach thoroughly, removing as much moisture as possible, before mixing in with the remaining filling ingredients.

  • Ranch dressing mix - Dry Ranch dressing mix seasons the filling and brings everyone's favorite Ranch flavor.

  • Cream cheese - Along with the spinach, serves as the base of the roll-up filling.

  • Mayonnaise - Brings creaminess to the filling.

  • Real bacon bits - For ease of prep, use packaged fully-cooked real bacon bits, which are found alongside the salad dressings at the grocery store. Or substitute 8 slices of crisp-cooked crumbled bacon, if you'd prefer.

  • Green onion - Two chopped green onions further enhance the filling's flavor.

  • Flour tortillas - Use 10-inch, soft taco-sized tortillas to make nicely-sized bites.

How to Make Bacon-Ranch Spinach Roll-Ups:

Whipping up a platter of Bacon-Ranch Spinach Roll-Ups is pretty easy.

Start by thawing some frozen spinach, and draining it really well to get out as much water as possible. I place it in a colander and press the spinach down with my hands or a large spoon. I then take clumps at a time in my hand and squeeze tightly to get out even more water. Or, you can place the colander-drained spinach between layers of paper towels and press it down to take out the last bits of water.

Another common method for draining frozen spinach is to line the colander itself with a couple sheets of paper towels, adding the spinach on top of the paper towels. Then, wrap the paper towels around the spinach and squeeze out the water.

Once the spinach is thoroughly drained, combine it in a mixing bowl with some dry Ranch dressing mix, cream cheese, mayonnaise, bacon bits, and chopped green onion. Stir everything together until they're well mixed.

Place about 3 tablespoons of the spinach mixture on each of 8 flour tortillas and spread it to cover the entire tortilla.

Roll the tortillas up tightly. Then wrap each roll up in plastic wrap and refrigerate them overnight, or for at least 8 hours, to allow the flavors to meld and the filling to firm up a bit.

At serving time, slice each roll-up into 1-inch bites.

  • What's the best way to drain frozen spinach? - Thaw frozen spinach by heating in the microwave for 1-2 minutes or until the spinach becomes soft and mushy. Then there are a few ways you can go from there to drain it. -- Place the thawed spinach in a colander and press it down with your hands or a large spoon.   • Can I use imitation bacon bits or cook my own bacon in place of the real bacon bits? - Yes, you can. To substitute imitation bacon bits, use a little less than the amount of real bacon bits called for in the recipe, as imitation bacon bits tend to be a bit saltier than real bacon bits. I recommend about 1/4 to 1/3 cup imitation bacon bits. To cook your own bacon for this recipe, crisp-cook 8 slices of bacon and crumble it into the spinach filling.
  • How long do spinach roll-ups keep in the refrigerator? - Spinach tortilla roll-ups will keep in the refrigerator for up to 4-5 days. They are at their best, however, when eaten within 2-3 days.

Ingredients
