- Cream cheese - Forms the base of the roll-ups' filling. We prefer full-fat regular cream cheese, but lower-fat Neufchatel cream cheese works just fine, too.
- Mayonnaise + milk - "Loosens" up the cream cheese to create a more creamy consistency in the roll-ups' filling. Full-fat or lower-fat version of mayonnaise and milk all work just fine.
- Ranch dip mix - Dry Ranch dip mix creates the dip's signature Ranch flavor. Look for it in an envelope in the salad dressing section of the grocery store.
- Bacon - Using packaged real bacon pieces makes the roll-ups super quick and easy to mix up. Look for real bacon pieces in the salad dressing section of the grocery store, alongside salad bacon bits. Or if you prefer, use crumbled crispy bacon that you fry up yourself.
- Cheddar cheese - Use medium cheddar you shred yourself (instead of packaged pre-shredded cheese) for the best texture and flavor result.

To get a batch going, start by stirring together some softened cream cheese, a bit of mayonnaise and milk, and some dry Ranch dressing mix until they're well combined. Then stir in shredded cheddar cheese, bacon pieces, chopped green onion, and some chopped fresh parsley. -- This mixture is the creamy filling for the roll-ups.
Divide the filling evenly between 8 taco-sized flour tortillas, and spread the filling to entirely cover each tortilla. An offset spatula works really great for this -- but a regular-old butter knife gets the job done just fine, too.
Roll up each tortilla pretty tightly. Then wrap each roll in plastic wrap and pop them all in the refrigerator to chill.
Once chilled, slice each roll into 1-inch bites -- which should be about 8 bites per roll-up.

Ingredients
- 2 (8 oz.) packages cream cheese, softened
- 3 T. mayonnaise
- 2 T. milk
- 2 c. shredded medium cheddar cheese
- 1 1/2 T. dry Ranch dressing mix (about 1/2 of a 1 oz. package)
- 1/2 c. packaged real bacon pieces OR crumbled crispy bacon
- 1/3 c. chopped green onion
- 2 T. chopped fresh parsley (optional)
- 8 flour tortillas (taco-sized)
Instructions
- In a small mixing bowl, stir together cream cheese, mayonnaise, milk, and dry Ranch dressing mix until well combined. Stir in shredded cheddar cheese, bacon, green onion, and parsley.
- Divide filling evenly between the 8 flour tortillas, and spread filling to cover entire tortilla.
- Roll up tightly. Wrap each tortilla roll up in plastic wrap and refrigerate.
