I recently learned eating candy corn and peanuts together is a thing. And oh my, what a beautiful thing it is!
When it comes to candy corn, it's one of those things people seem to be deeply divided about. -- You either love it or hate it, with seemingly not much middle ground about it at all. I'm one of those who does like it, but in moderation. I can't sit down to a big handful of it, but do enjoy getting my fix in every candy corn season with nibbles on a few pieces here and there.
But when you take candy corn and mix it with peanuts? -- It becomes a little bit of sweet-salty heaven. This way? -- I can enjoy much more than just a few nibbles of the tasty stuff!
What better way to beautifully bring together peanuts and candy corn than to surround them in a soft and super tasty peanut butter cookie?
I truly can't believe I've been in the dark all this time about the candy corn-peanut combo deliciousness. And once I knew about the fabulous sweet-and-salty combination of candy corn and peanuts, it only made sense to put them together in a fall and Halloween-inspired sweet treat.
And what better way to beautifully bring together peanuts and candy corn than to surround them in a soft and super tasty peanut butter cookie? Oh, there's no better way, for sure.
So I bring you -- Peanut Butter Candy Corn Cookies, of course.
Loaded with peanut butter, dry roasted peanuts, and candy corn melted in the center and tucked on top, Peanut Butter Candy Corn Cookies are one totally delicious sweet-and-salty sweet treat, indeed.
Peanut Butter Candy Corn Cookie Ingredients
Three ingredients join together as the stars of these Peanut Butter Candy Corn Cookies. They are:
- Candy corn - Candy corn is melted into the middle and embedded on the tops of these tasty cookies, bringing the sweetness of candy corn into every bite. Choose regular white-orange-yellow candy corn, or the brown-bottomed chocolate variety to suit your preference. Either type will work just fine.
- Dry-roasted peanuts - Dry-roasted peanuts bring the salty element to these sweet-and-salty cookies. We think the cookies are great with dry-roasted peanuts, but if you prefer an even saltier cookie choose salted peanuts instead.
- Creamy peanut butter - Peanut butter provides the base flavor for the cookie itself. Surrounding the candy corn-peanut combination with peanut butter cookie beautifully brings the peanut element of this sweet treat even more to the forefront.
How to Make Peanut Butter Candy Corn Cookies
To make a batch of Peanut Butter Candy Corn Cookies, start by whipping up a basic peanut butter cookie dough. A combination of peanut butter, granulated sugar, and brown sugar are what gives peanut butter cookies their characteristic and distinct flavor.
Then stir a half cup of dry roasted peanuts into the dough.
Once the peanut-studded cookie dough is prepared, scoop about 2 tablespoons of dough for each cookie. I use a cookie scoop to make scooping the dough super easy, and to help keep my cookies uniform in size.
With each scoop of cookie dough, insert one candy corn into the center of the dough ball.
Then use your fingers to cover the piece of candy corn with dough, making sure cookie dough completely covers the candy corn on all sides.
If any part of the candy corn is left exposed, it will stick to the baking sheet as it melts during baking.
Place each cookie dough ball on a baking sheet and pop them in the oven for about 11 to 13 minutes.
I bake these cookies for just 11 minutes so they are super soft. -- We love our cookies on the soft side. If you like your cookies on the firmer side, bake them for the longer 13-minute baking time.
As the cookies bake, the piece of candy corn melts into the middle and forms a chewy candy corn-flavored center. You can see that chewy center peeking through the back of the baked cookie in the photo below.
When the cookies are done baking, remove the pan from the oven and immediately press 3 to 4 pieces of candy corn into the top of each cookie.
Really embed the candy corn into the warm cookie, rather than simply just placing it there. I actually kind of dig the candy corn in, sort of "deflating" the top of the cookie. This is to ensure the candy corn truly sticks on the cookies after the cookies are cooled.
If you just place the candy corn on the cookie tops, some candy corn pieces will fall off once the cookies have cooled.
Let the cookies cool on the baking sheet for 5 minutes to set that candy corn center, and then use a spatula to carefully transfer them to a cooling rack to cool completely.
And then you have a batch of beautifully delicious candy corn-studded cookies ready for enjoying!

Ingredients
- 1/2 c. unsalted butter, softened
- 1/2 c. creamy peanut butter
- 1/2 c. granulated sugar
- 1/2 c. light brown sugar
- 1 egg
- 1/2 tsp. vanilla extract
- 1 1/4 c. all-purpose flour
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. dry-roasted peanuts
- about 3/4 c. candy corn
Instructions
- Place butter, peanut butter, sugar, and brown sugar in a mixing bowl. Cream together on medium speed with an electric mixer until light and fluffy, about 1 minute.
- Add egg and vanilla. Mix until well combined.
- Combine flour, baking soda, and salt. Add to butter mixture and stir until just combined.
- Stir in peanuts.
- Scoop about 2 tablespoons dough for each cookie, inserting one candy corn into the center of the dough ball. Make sure cookie dough completely covers the candy corn on all sides. Place on a baking sheet.
- Bake at 325℉ for 11-13 minutes.
- Remove pan from oven and immediately press 3 to 4 pieces of candy corn into the top of each cookie.
- Let cookies cool on baking sheet for 5 minutes, then use a spatula to carefully transfer cookies to a cooling rack to cool completely.

- When pressing the candy corn into the top of each cookie, really embed it into the warm cookie rather than just placing it there. If you just place the candy corn on the cookie top, some pieces will fall off once the cookies are cooled.
