Cookie Dough Pretzel Bite Ingredients:

Basic chocolate chip cookie ingredients, minus the eggs, is all it takes to make edible chocolate chip cookie dough filling for these tasty little pretzel bites. To whip up a batch of bites, you'll need:

  • Pretzel Snaps - Also known as waffle pretzels, these create the outer structure of the pretzel sandwiches. Mini twists can be used instead, but we do prefer the look of the finished bites when made with pretzel snaps.

  • Butter - As with chocolate chip cookie dough for baking, butter serves as the creamy foundation of this edible raw dough filling, as well. Choose unsalted butter, or omit the cookie dough filling's additional salt if using salted butter.

  • Brown sugar - Helps create that signature chocolate chip cookie taste in this edible dough filling.

  • Granulated sugar - Along with the recipe's brown sugar, further sweetens the cookie dough.

  • Water - Serves as the moisture element to bring the cookie dough together. Water replaces cookie dough's usual eggs, and thereby creates an eggless chocolate chip cookie dough version that's safe to eat raw as the filling for these bites.

  • Vanilla extract - A traditional chocolate chip cookie flavoring. Choose 100% pure vanilla extract, rather than imitation, for the best flavor result.

  • Flour - Just as in baked chocolate chip cookies, all-purpose flour creates the structure and bulk of the dough. To make it safe for eating in the raw cookie dough, heat-treat the flour by baking it in the oven before adding it to the dough mixture. Though we often don't think of flour as a raw food, it is. As packaged, flour hasn't been treated to kill germs and bacteria that can cause food poisoning. -- These germs and bacteria can contaminate the grain used to make flour while it's still in the field or while the flour's being made. Without heat-treating, flour is not safe for consumption in unbaked treats.

  • Salt - Enhances the flavor of the cookie dough filling, and nicely balances out its sweetness.

  • Mini chocolate chips - We love the texture of this cookie dough filling made with mini chocolate chips. However, regular-sized semi-sweet chocolate chips can be used just fine, as well.

  • Chocolate chips - Melted semi-sweet chocolate chips create the Cookie Dough Pretzel Bite's chocolate coating.

  • Shortening - Thins the chocolate a bit for dipping and helps create a nice, smooth chocolate coating on the finished pretzels. Vegetable/canola oil or coconut oil can be substituted.

How to Make Cookie Dough Pretzel Bites:

There are 3 components to making Cookie Dough Pretzel Bites:
  1. Make the edible chocolate chip cookie dough filling,
  2. Assemble the pretzel bite "sandwiches," and
  3. Dip the cookie dough pretzel "sandwiches" in chocolate.

1. Make the Edible Chocolate Chip Cookie Filling

Making the edible chocolate chip cookie dough filling for the pretzel bites is super easy. You do, however, need to make sure to heat treat the flour to make the dough safe for consumption as the unbaked filling for the pretzels. (And leave out the usual eggs in cookie dough, of course!)

To heat treat the flour, line a rimmed baking sheet with parchment or foil. Spread the flour in a thin layer in the lined baking sheet, and then bake it at 350℉ for 8 minutes. -- Watch the flour closely as it bakes, as you don't want the flour to brown. If it begins to brown in any areas, immediately remove the flour from the oven.

To mix up the cookie dough filling, combine some butter, sugar, brown sugar, and vanilla in a large bowl and beat them together until the mixture is creamy. Then beat in some water, which replaces the eggs that are usually in cookie dough (making the dough safe to eat raw).

Combine the cooled heat-treated flour with some salt, stirring the mixture with a fork or whisk to break up any clumps of flour. Then beat the flour-salt mixture into the butter mixture until the dough is well combined.

Then, finish off the cookie dough filling by stirring in some mini chocolate chips.

2. Assemble the Pretzel Bite "Sandwiches"

For each Cookie Dough Pretzel Bite, measure out a scant 1-teaspoon of the cookie dough filling and roll it into a ball.

Place each ball of cookie dough on top of a pretzel. Then press another pretzel on top to form a pretzel sandwich.

Pop the pretzel sandwiches in the refrigerator to chill for about 20 to 30 minutes. -- This firms the cookie dough filling a little and adheres it better with the pretzels before dipping them in chocolate.

3. Dip the Pretzel Bite "Sandwiches" in Chocolate

To prepare the chocolate coating for dipping, melt together semi-sweet chocolate chips and a little bit of shortening. Adding a small bit of shortening to the chocolate thins it a bit and helps create a nice, smooth coating on the finished pretzels.

Then working with one pretzel sandwich at a time, dip each pretzel sandwich halfway up in the melted chocolate, leaving some of the pretzel sandwich exposed. Let any excess chocolate drip back off into the melted chocolate, and place the dipped pretzels on a wax paper-lined baking pan.

Let the chocolate set before enjoying -- You can speed this process up by popping the dipped bites in the refrigerator for about 5 minutes. Then store the finished Cookie Dough Pretzel Bites in an airtight container in the refrigerator for up to about 2 to 3 weeks.

Ingredients

  • 1 (16 oz.) bag pretzel snaps (waffle pretzels)
For the chocolate chip cookie dough filling:
  • 1 c. unsalted butter, softened
  • 1 c. packed brown sugar
  • 3/4 c. granulated sugar
  • 1/4 c. water
  • 1 1/2 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 c. (about 6 oz.) mini chocolate chips
For the chocolate coating:
  • 3 c. (18 oz.) semi-sweet chocolate chips
  • 3 tsp. shortening

Instructions

Heat treat the flour:
  1. Line a rimmed baking sheet with parchment or foil. Spread flour in a thin layer in baking sheet.
  2. Bake at 350℉ for 8 minutes. -- Watch closely, as you do not want the flour to brown. If it begins to brown in any areas, remove it from the oven.
  3. Set aside to cool.
Prepare the cookie dough filling:
  1. In a large bowl combine butter, sugar, brown sugar, and vanilla; beat until creamy. Beat in water.
  2. Combine cooled heat-treated flour and salt, stirring with a fork or whisk to break up any clumps of flour. Add flour mixture to butter/sugar mixture; mix well. Stir in mini chocolate chips.
  3. Place pretzels in a single layer on a wax paper-lined baking sheet.
  4. Roll a scant 1-teaspoon of chocolate chip cookie dough into a ball and place on top of a pretzel. Press another pretzel on top of the cookie dough ball to form a sandwich. Repeat with remaining pretzels and dough.
  5. Place in refrigerator for 20-30 minutes.
Dip in chocolate:
  1. Combine chocolate chips and shortening in the top of a double boiler or small shallow mixing bowl set over simmering water.
  2. Stir frequently until chocolate chips are melted and smooth.
  3. Working with one pretzel sandwich at a time, dip pretzel halfway up in the melted chocolate, leaving some of the pretzel sandwich exposed. Let any excess chocolate drip off back into the melted chocolate. Place on wax paper-lined pan.
  4. Repeat until all pretzel sandwiches have been dipped in chocolate.
  5. Allow chocolate to set before enjoying. Store in an airtight container in the refrigerator for up to about 2 to 3 weeks.
