Corn is our 10-year-old daughter's absolute favorite vegetable.  And at times, it seems it's about the only vegetable we eat.  So I frequently turn to dishes like corn pudding, corn fritter casserole, fiesta corn casserole, and crock pot creamed corn to change up our corn routine.

But when it comes to corn casseroles, this Country Corn Casserole is our hands-down absolute favorite.  

Our favorite for the family because it tastes fabulous.  And my favorite as the dinner-cook because it's super easy to make.  Yes, it takes an hour to bake so you have to think at least a little bit ahead.  But as far as prep goes, it takes all of about 10 minutes to get it mixed and in the oven.

Country Corn Casserole bakes up into a creamy concoction of golden corn surrounded in a totally tasty, scoopably soft and tender cornbread mixture.

Why is it so quick and easy to prep?

Well, because it takes advantage of the convenience of canned corn and packaged cornbread mix to create its deliciousness.  The base of the casserole is canned corn, canned cream-style corn, and Jiffy corn muffin mix (or other similar packaged cornbread mix).  Then you just mix in a few other basic pantry staples, and you're good to go.

Country Corn Casserole Ingredients:

There's truly nothing fancy in this tasty Country Corn Casserole! To whip up a pan, you'll need:

  • canned whole kernel corn
  • canned cream-style corn
  • eggs
  • sour cream
  • vegetable or canola oil
  • granulated sugar
  • Jiffy corn muffin mix or other packaged cornbread mix
  • salt & pepper

How to Make Country Corn Casserole:

Mixing up a pan of this cornbread corn casserole is super easy.

Start by simply combining a can of whole kernel corn, a can of cream-style corn, 2 eggs, some sour cream, oil, granulated sugar, and salt & pepper in a mixing bowl until they're well mixed.

Then add in packaged corn muffin or cornbread mix, and stir everything together until it's just combined.  You don't want to overmix at this point -- Stir until the corn muffin mix is just moistened.

Spoon the batter into a greased 9x13-inch baking dish.  Then, bake it up for 1 hour.

Ingredients

  • 1 (16 oz.) can whole kernel corn, drained
  • 1 (16 oz.) can cream-style corn
  • 2 eggs, lightly beaten
  • 1 c. sour cream
  • 1/2 c. vegetable or canola oil
  • 1/3 c. granulated sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 (8.5 oz.) box Jiffy Corn Muffin Mix

Instructions

  1. In a mixing bowl, combine the whole kernel corn, cream-style corn, eggs, sour cream, oil, sugar, salt, and pepper; stir until well mixed. Add corn muffin mix and stir until just combined.
  2. Spoon the mixture into a greased 9x13-inch baking dish.
  3. Bake at 350℉ for 1 hour.

  1. Substitute any 7-ounce to 8.5-ounce package of corn bread mix for the Jiffy mix, if you'd like.
  2. This pairs beautifully with holiday ham, Thanksgiving turkey, or just about any everyday meaty meal.
