We recommend florets over chopped broccoli because florets are more tender with less stem pieces in the package. That being said, frozen chopped broccoli can be substituted, if you'd like.
- Jiffy corn muffin mix - Creates the cornbread base of the casserole. Taking advantage of packaged Jiffy corn muffin mix means super easy prep for this tasty comfort food casserole. Substitute any 7-ounce to 8.5-ounce package of corn bread mix for the Jiffy mix, if you'd prefer.
- Canned cream-style corn - Brings fabulous background flavor to the casserole, and provides some of the moisture needed to mix up the cornbread.
- Eggs - Helps the cornbread mixture rise and bake into a cohesive structure.
- Sour cream - Brings moisture and richness to the cornbread mixture. We recommend using full-fat regular sour cream, but reduced-fat sour cream works fine as well.

To get a pan started, combine a can of cream-style corn, some eggs,
sour cream, vegetable oil, sugar, salt, and pepper in a mixing bowl
and stir them until they're well mixed. Then add in a package of Jiffy
corn muffin mix and stir that in until everything's just
combined.
Finally, stir in some thawed frozen broccoli florets. I like to
coarsely chop the florets, just so there's no huge broccoli chunks in
the finished baked casserole. Also, I sprinkle the broccoli with a
pinch of salt before adding them to the cornbread mixture -- just so
they get a little seasoning flavor boost directly on them before being
stirred in.
Once mixed, spoon the broccoli-cornbread mixture into a greased
9x13-inch baking dish.
Then pop the pan in the oven and bake the casserole up for an hour until
it's set and lightly golden browned.

Ingredients
- 1 (16 oz.) package frozen broccoli florets (cooked, drained, & coarsely chopped)
- 1 (16 oz.) can cream-style corn
- 2 eggs, lightly beaten
- 1 c. sour cream
- 1/2 c. vegetable or canola oil
- 2 T. granulated sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 (8.5 oz.) box Jiffy Corn Muffin Mix
Instructions
- In a mixing bowl, combine the cream-style corn, eggs, sour cream, oil, sugar, salt, and pepper; stir until well mixed. Add corn muffin mix and stir until just combined. Sprinkle thawed broccoli with a pinch of salt; stir broccoli into cornbread mixture.
- Spoon mixture into a greased 9x13-inch baking dish.
- Bake at 350℉ for 1 hour.
