We love to enjoy baked onions at our house.  They're just such a tasty and simple little side that goes wonderfully with about any meal.  I swear, my husband would eat them every day if I'd make them that often.

The only problem is -- baked onions take about an hour to bake.  And quite often I just don't have that much time to get dinner on the table.  Or, I just fail to think that far ahead.

But you know what?  There's a much quicker way to make "baked" onions. -- In the microwave.  Yes, you can cook whole onions in the microwave -- and it takes just 12 to 15 minutes.

Follow these steps on how to make baked onions in the microwave, and you can enjoy soft, tender, tasty onions in less than 15 minutes.

We use the microwave method with small to medium-sized yellow or sweet Vidalia onions, and it works beautifully.  The onions turn out just as soft, tender, and tasty as their oven-baked counterparts and are a great quick alternative to oven-baked.

The one difference I do see is microwave-baked onions turn out a little more moist than those baked in the oven.

Because they're cooked with a little water that essentially steam-cooks the onions, they hold some moisture.  Whereas onions baked in the oven are more a dry, roasted texture. It's not a difference that deters us from the microwave way to cook whole onions, however.

So just how do you make baked whole onions in the microwave?  It's super easy.

Start by cutting about a 1/4-inch slice from the top and bottom of four small to medium-sized onions, and remove the outer skins.

Then use a paring knife to cut a small cone into the top of each onion.  Place the onions in a 8x8-inch microwave-safe baking dish.

Place about 1/2 to 1 tablespoon of butter into the cone in each onion.  Cutting a cone in the top allows the butter to melt down into the onion itself as the onions cook, rather than just sliding off down the side.

Season the onions with salt and pepper.  Then pour 1/2 cup water into the bottom of the baking dish.

Cover the onions and baking dish tightly with plastic wrap.

Then pop them in the microwave and cook on HIGH/full power for 10-12 minutes, or until the onions are tender.  If your onions are on the large side, they may take the full 12 minutes or a minute or two more.

The result will be soft, tender onions all the way through to the middle.

Pour out the water in the dish and serve up the onions with a little more salt and pepper, as needed.  If you're like us, you'll probably want to add a little salt and pepper to the inside once you cut these beauties open.

Ingredients:

  • 4 small to medium-sized yellow or sweet Vidalia onions
  • 2 to 4 T. butter
  • salt & pepper
  • 1/2 c. water

Instructions:

  1. Cut about a 1/4-inch slice from the top and bottom of each onion; remove outer skins.
  2. Use a small paring knife to cut a small cone into the top of each onion.  Place onions in an 8x8-inch microwave-safe baking dish.
  3. Place about 1/2 to 1 tablespoon butter into each cone. Season onions with salt and pepper.
  4. Pour 1/2 cup water into the baking dish.  Cover tightly with plastic wrap.
  5. Microwave on HIGH/full power for 10-12 minutes, or until onions are tender.
TRACEY'S NOTES:
  1. Cutting a cone in the top of each onion allows the butter to melt down into the onion itself as the onions cook, rather than just sliding off down the side of the onion.
  2. Serve up the onions with additional salt and pepper, as needed.  Once cut open, you'll probably want to add a little salt and pepper to the inside.  When serving, sprinkle the tops with some chopped fresh parsley if you'd like.

  3. Havent't had baked onions in years. My step-brother used to make them and they were so good.
    He would put some beef bouillion in his....which made them take really great. Thanks for reminding me about these, this is an easy veggie to make, so will have to try it soon.
