Well here we are at the start of another new year ~ Happy 2017, everyone!

As with many of us, the start of the year has me thinking about what I'd like to get better at in the coming year.  It's a great time for reflection, don't you think?  

This year, one thing I'm resolving is to share even more meals together as a family.  Yes, even though I'm a food blogger and am cooking pretty much all the time, hectic schedules still make it tough to gather around the table as a family sometimes.

Thanks to Taste of Home, I've found a fabulous resource to help me with this resolution ~ their new "100 Family Meals" cookbook.

When you have the right resources, whipping up a delicious meal to share is easy to do, right?

And this cookbook is one resource jam-packed with easy, tasty recipes that give tons of inspiration for family meal time.  Since there's 100 recipes, that's almost two family-centered meals a week for the whole year!

When I first thumbed through the cookbook, I was impressed with just how many of the recipes sounded totally doable for a busy weeknight.  I found myself dog-earing page after page to mark recipes I wanted to try.

The first one I decided to give a whirl is this Slow Cooker Ham & Corn Chowder.

Loaded with tender potatoes, sweet corn, and diced ham, this hearty creamy soup was just the perfect way to enjoy the last bits of our leftover Christmas ham.  But when I make it at other times in the year, it'll be no problem to grab a little bit of deli ham to chop up instead ~ quick and easy.

Not only do I love the great selection of recipes in this cookbook, I also love that so many of the recipes are easy enough to prepare that I can actively involve our 6-year-old daughter in the cooking of them.

Because sharing meals together as a family can be about more than just sitting down together at the table ... it can most certainly be about the joy of cooking them together, too.

Our daughter loves  to help in the kitchen, and I absolutely love sharing that time and creative process with her.

For this chowder, I did all the chopping (I'm not quite ready for the little one to wield the knife yet) and our daughter did all the load-the-slow-cooker and stirring part.  She was so proud of "her" pot of soup!

It was certainly one the whole family enjoyed eating ... and that she and I enjoyed preparing together.

So if like me, you're looking to share more family meals together in the coming year, I highly recommend looking to the Taste of Home "100 Family Meals" cookbook for inspiration.  It's loaded with easy family-friendly recipes that can sure help bring the family together around the table ... and around the stove top, oven, or slow cooker to prepare them, too.

Slow Cooker Ham & Corn Chowder

Slow Cooker Ham & Corn Chowder is a deliciously hearty and creamy meal perfect for sharing together as a family. And a perfect recipe to enjoy that leftover ham.

ingredients:

  • 1 1/2 lbs. potatoes, peeled & cut into 1/2-inch cubes {about 3 medium potatoes}
  • 4 c. fresh or frozen corn, thawed {about 20 oz.}
  • 4 c. cubed ham {leftover or deli ham}
  • 2 small onions, chopped
  • 4 ribs celery, chopped
  • 4 cloves garlic, minced
  • 1/4 tsp. black pepper
  • 3 c. chicken broth
  • 2 T. cornstarch
  • 2 c. whole milk
  • 2 c. (8 oz.) shredded sharp cheddar cheese
  • 1 c. sour cream
  • 3 T. minced fresh parsley

instructions:

How to make Slow Cooker Ham & Corn Chowder

  1. Place the first 8 ingredients in a 6-quart slow cooker (potatoes, corn, ham, onions, celery, garlic, pepper, and chicken broth). Cook, covered, on LOW 8-10 hours* or until potatoes are tender.
  2. In a small bowl, mix the cornstarch and milk until smooth; stir into soup. Cook, covered, on HIGH 20-30 minutes or until thickened, stirring occasionally.
  3. Stir in cheese, sour cream and parsley until cheese is melted.
TRACEY'S NOTES
  1. I've also cooked the soup on HIGH for 5-6 hours, with success.

  3. Made the corn and ham chowder on the stovetop. Used 2.75 cups of chicken stock instead of 3 cup. Added 1/4 cup cooking sherry. Also added about 1/2 tsp of cloves. Ham goes well with cloves. Milk was 2% rather than whole. Potatoes help thicken the broth as well. It was very good!
