Ham & Cheese Lasagna

Got ham?

Sure, I bet many of us still have some leftover Easter ham in the frig, ... or have popped some in the freezer.  Well, this Ham & Cheese Lasagna is my absolute favorite way to enjoy our leftover Easter ham ...
... though I can take ZERO credit for actually cooking the Easter ham.  Nope.  Mom does that.  {I did lift it into the oven.  Does that count for anything?}

I did make this Ham & Cheese Lasagna, however.  It's kind of my Easter tradition.  Every year my Mom sends me home with a little goodie bag of ham leftover from our family's Easter dinner.  She's so sweet like that.  And every year I chop it up and make her Ham & Cheese Lasagna.  Yup, she created this recipe.  Way back when I was a kid.  And I still love it today.

Instead of a traditional red sauce, you whip up a Monterey Jack cheese-infused white sauce for Mom's ham take on lasagna.  After stirring in chopped ham and some mushrooms, then you go the traditional lasagna route by layering it up with cooked lasagna noodles.

If you've got a hankering for Ham & Cheese Lasagna but don't have leftover ham, no worries.  Just buy a ham steak and chop it up, or even ask the deli to cut you a couple of thick ham slices ... like about 1/4-inch thick ... and just chop that up.  Works just fine!

If you do have leftover ham and are looking for a new way to enjoy it, then my Mom's Ham & Cheese Lasagna is just the thing for ya.  I hope you enjoy it as much as our family does.

Ham & Cheese Lasagna

  • 9 to 12 lasagna noodles
  • 1/2 c. chopped onion
  • 2 T. butter
  • 3 T. all-purpose flour
  • 2 c. milk
  • 1 c. cottage cheese
  • 2 c. shredded Monterey Jack cheese, divided
  • 2 c. finely chopped fully cooked ham
  • 1 (8 oz.) package fresh mushrooms {or substitute 8 oz. canned mushrooms}
  • 1 T. dried parsley
  1. Cook lasagna noodles according to package directions; drain and set aside.
  2. Melt butter in a medium saucepan over medium heat; add chopped onion and mushrooms; cook until tender, about 4 to 5 minutes.
  3. Blend in flour until onions are well coated. Add milk all at once; cook and stir over medium heat until thickened and just beginning to bubble, about 5 to 7 minutes.
  4. Add cottage cheese and 1 cup of the shredded Monterey Jack cheese; stir until melted. Stir in the ham, mushrooms, and parsley. Remove from heat.
  5. In a 9x13" baking dish coated with non-stick cooking spray, arrange three lasagna noodles and top with 1/3 of the ham mixture. Repeat to create two more layers of noodles and sauce. Sprinkle the remaining cup of shredded Monterey Jack cheese on top.
  6. Bake at 350 degrees for 40 minutes. Remove lasagna from the oven and let stand for 15 minutes before serving.
