One of our favorite recipes for leftover ham, Cheesy Ham & Broccoli Casserole is creamy, cheesy, and loaded with fabulous flavor. A tub of chive & onion cream cheese is the surprise ingredient that helps create that wonderful creaminess and flavor.

To whip up a pan of this deliciousness, you'll need:

  • Chopped ham - Leftover ham works perfectly. Or if you don't want to wait for leftovers, use thick-cut ham from the deli, a ham steak, or any other form of ham you can chop up.

  • Frozen broccoli florets - We recommend florets instead of chopped broccoli or broccoli cuts, which contain a bunch of stem pieces.

  • Egg noodles - Wide egg noodles create a nice, tender noodle base for the casserole.

  • Cream of mushroom soup - Contributes nicely to the casserole's flavor and creaminess.

  • Chive & onion cream cheese - The biggest secret to the wonderful creaminess and flavor of the dish.

  • Milk - Thins the consistency of the cream of mushroom soup and chive & onion cream cheese mixture.

  • Shredded mozzarella & cheddar cheeses - We couldn't call this casserole "cheesy" without a hearty dose of cheese!

  • Buttery crackers - Serve as the casserole's crunchy topping. We use Keebler Club crackers, or any other type of mild-flavored buttery cracker will work.

  • Salt & pepper - Season and enhance the casserole's flavors.

How to Make Cheesy Ham & Broccoli Casserole:

A pan of Cheesy Ham & Broccoli Casserole comes together pretty easily. It truly just takes boiling some noodles, a little chopping, and a little stirring to get this casserole into the oven.

To get started, combine a can of cream of mushroom soup, a tub of chive & onion cream cheese, a bit of milk, and some salt and pepper in a big mixing bowl, stirring them together until they're well mixed. Then add in cooked noodles, chopped fully-cooked ham, and some broccoli florets.

Give it all a good gentle stir until everything's well combined and nicely coated in the cream of mushroom soup mixture.

Then create layers by spooning half of the ham/broccoli mixture into a 9x13-inch baking dish and topping it with shredded cheese. Repeat with the remaining ham/broccoli mixture and some more cheese to finish the layers off.

Coarsely crush about half a sleeve of Keebler Club crackers and sprinkle them evenly over the top to make a nice, crunchy topping.

Then pop the pan in the oven for about 30 minutes or so, until the casserole is lightly browned on top and all bubbly around the edges.

When ready to enjoy, thaw the casserole in the refrigerator for about 8 hours. Then bake, uncovered, at 375℉ for 40 minutes. Be aware, the texture of the noodles may change a bit after being frozen.

  • Can I substitute fresh broccoli florets for frozen in the casserole? - Yes, you can substitute fresh broccoli florets for frozen in a casserole. However, the fresh broccoli must be partially cooked before mixing it in. -- And to keep it from turning an unpleasant color or to mush, the broccoli can't be cooked in just any way, it must be blanched and shocked. Blanching and shocking means immersing a food in boiling water for only a few short seconds, and then quickly cooling it down with icy water to stop the cooking process. A short-cut easy way to do this with fresh broccoli florets is to place them in a colander. Then heat a pot of water to boiling, pour the boiling water over the broccoli (to blanche it), and immediately run very cold water from the tap over the broccoli (to shock it) until the broccoli is cool to the touch. This method isn't a technically-perfect way to blanche and shock, but it works for a casserole.

Ingredients

  • 1 (10 oz.) can cream of mushroom soup
  • 1 (8 oz.) container chive & onion flavored cream cheese, softened
  • 2/3 c. milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 8 oz. egg noodles, cooked in salted water & drained
  • 2 c. chopped fully-cooked ham
  • 1 (16 oz.) package frozen broccoli florets, thawed
  • 2 c. (8 oz.) shredded mozzarella cheese
  • 2 c. (8 oz.) shredded medium cheddar cheese
  • 1/2 sleeve butter crackers (such as Keebler Club), coarsely crushed

Instructions

  1. In a large mixing bowl, combine cream of mushroom soup, chive & onion cream cheese, milk, salt, and pepper. Stir together until well mixed.
  2. Add cooked noodles, ham, and broccoli; stir to combine.
  3. Spoon half of the ham mixture into a greased 9x13-inch baking dish.
  4. Combine shredded mozzarella and cheddar cheeses. Sprinkle half the cheese over the ham mixture in the baking dish.
  5. Spoon remaining ham mixture evenly over cheese layer. Top with remaining shredded cheese. Sprinkle crushed crackers on top.
  6. Bake at 375℉ for 30 minutes, or until lightly browned on top and bubbly around the edges.
