Don't let that leftover ham bone go to waste!  Grab your slow cooker and whip up a pot of Slow Cooker Ham & Kidney Bean Soup ~ truly easy, truly delicious, and truly one of my absolute favorites.

I'm so excited next week is Easter!  One reason being that Easter means Easter dinner.

And Easter dinner means ham.  And ham for dinner means a leftover ham bone.

And you want to know what a leftover ham bone means in our family?  It means a big pot of Mom's world-famous Slow Cooker Ham & Kidney Bean Soup!

Okay, okay ... so maybe Mom's Slow Cooker Ham & Kidney Bean Soup isn't world famous.  But it sure should be!

It's my absolute favorite of Mom's soups.  And growing up, I also looked forward to her making a big pot of it after Easter with our leftover ham bone from Easter dinner.

And as an extra bonus?  This should-be-world-famous Ham & Kidney Bean Soup truly couldn't be any easier to make.

All you do is simply toss your leftover ham bone, some vegetable broth, canned dark red kidney beans, and a bunch of vegetables in the slow cooker ...

... and let the slow cooker do its thing.

That's all there is to it!  Truly easy, right?

And, trust me, truly delicious.

Mom's should-be-world-famous Slow Cooker Ham & Kidney Bean Soup, to this day, truly remains one of my favorites ... at Easter time and any time.

Slow Cooker Ham & Kidney Bean Soup

  • 1 ham bone {leftover from cooking a ham}
  • 4 c. vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 (16 oz.) cans dark red kidney beans, drained & rinsed
  • 2 onions, chopped
  • 3 stalks celery, sliced
  • 3 carrots, peeled & sliced
  • 2 potatoes, peeled & diced
  • 1 T. dried parsley
  • 1/4 tsp black pepper
  1. Place all ingredients in slow cooker. Cook on low setting for 6 to 8 hours, or on high setting 4 to 6 hours.
  2. Taste cooked soup; if needed, add 1/4 to 1/2 teaspoon salt.
