A very long time ago I shared some fabulous Mocha Swirl Cookies -- made with beautifully delicious swirls of chocolate and coffee doughs rolled together to form a gorgeous chocolatey-coffee spiral. And you want to know the simple technique used to create the super tasty coffee dough? -- Instant coffee stirred right into the batter.

Yes, making coffee dough was truly that easy. The simple little trick of stirring instant coffee granules into the cookie batter was an amazingly easy way to create wonderful coffee flavor.

Which got me to thinking. -- Would the same instant-coffee-granules-in-the-cookie-batter technique work to transform regular chocolate chip cookies into tasty coffee chocolate chip cookies? So I absolutely gave it a try.

I'm very happy to report that yes, yes, it does. And the resulting Coffee Chocolate Chip Cookies are quite tasty indeed! Oh, what a great on-the-go way to get your mid-day coffee fix -- without even needing a cup.

I tried several different amounts of instant coffee to find just the right touch of coffee flavor for these Coffee Chocolate Chip Cookies. With 1 tablespoon of instant coffee (Folgers brand), I got a nice subtle coffee flavor that was just right for us. But if you want a stronger coffee taste, simply add a little bit more instant coffee. One and half tablespoons is a good amount to get a more pronounced coffee flavor without going too overboard.

One of my friends who plays the role of "unofficial taste tester" for The Kitchen is My Playground described eating one of these Coffee Chocolate Chip Cookies as being a bit like eating a chocolate covered coffee bean. -- First, you taste chocolate and then you get a deliciously subtle hit of coffee on the backend.

How to Make Coffee Chocolate Chip Cookies:

Whipping up a batch of Coffee Chocolate Chip Cookies is the same as making traditional chocolate chip cookies, just with the addition of instant coffee. -- So they're pretty easy to make.

To avoid crunching into a big-ol' hunk of instant coffee in the finished cookies, a key step is to crush the instant coffee granules into a powder before adding them to the cookie dough.

To crush the coffee, place the granules in a zip-top baggie. Then use a meat mallet to gently pound them into a fine powder.

Then mix up a traditional chocolate chip cookie dough, and simply stir in the crushed instant coffee along with the chocolate chips at the end of the mixing process.

Scoop out the dough onto baking sheets, using about 2 tablespoons dough per cookie. -- I use a 2-tablespoon cookie scoop to make this process super easy.

Then pop the pans in the oven and bake up the coffee-chocolate chip deliciousness.

Then get ready to dive into the tasty result. -- And that tasty result isn't simply chocolate chip cookies. It's Coffee Chocolate Chip Cookies! They're everything we love about chocolate chip cookies, loaded with a tasty coffee twist.

The only thing left to do is enjoy a big-ol' stack with a tall glass a milk. Unless you prefer your coffee black, that is.

Coffee Chocolate Chip Cookies

Ingredients

  • 2 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. butter, at room temperature
  • 3/4 c. granulated sugar
  • 3/4 c. brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 (12 oz.) package semi-sweet chocolate chips
  • 1 to 1 1/2 T. instant coffee granules*

Instructions

  1. Combine flour, baking soda, and salt; set aside.
  2. Place instant coffee granules in a small zip-top plastic bag. Using a meat mallet or the bottom of a drinking glass, gently crush granules into a powder. Set aside.
  3. In a large bowl combine butter, sugar, brown sugar, and vanilla; beat until creamy. Beat in eggs.
  4. Gradually add flour mixture; mix well. Stir in coffee granule powder, and then stir in chocolate chips.
  5. Drop by rounded teaspoonful onto a cookie sheet. Bake at 375 degrees for 8-10 minutes. (For soft cookies, the cookies should still look a bit uncooked in the middle when you take them out of the oven.) Let cookies stand on the pan for about a minute before removing to a cooling rack.
TRACEY'S NOTES:
  1. * Use 1 T. instant coffee granules for a nice subtle coffee flavor (which is the way we love them). If you'd like the coffee flavor to be more pronounced, use 1 1/2 T.
  2. Don't skip the step of crushing the instant coffee granules. Crushing them into a powder disperses their flavor more evenly throughout the cookies, and keeps you from biting into an unpleasantly-large coffee granule when enjoying your cookies.
