Are you like me and get tired of grabbing the same old snacks all the time?  When I hit that afternoon snack-attack time, I tend to open up the pantry door and grab the same thing day after day after day.

So I turned to one of my favorite party-time treats, Bite-Sized Pepperoni & Sausage Pizza Puffs, for some inspiration.  And this was just what I needed to create a new tasty favorite snack! ~ these tasty little Bacon Cheddar Puffs.  Because isn't something that's super tasty as pizza just as yummy {or even better} with bacon?

When it comes to these puffs, the answer is yes, yes indeed it is.

Now I didn't necessarily want to fry up bacon to make these puffs.  Because, well, that's a whole lot of fuss for whipping up a quick snack, and kind of takes the "quick" out of it.  So I used pre-cooked real bacon bits you can buy at the store ... the REAL ones, not the little bitty fake bacon {facon, as I say} ones. But if you'd rather fry up bacon and crumble it, by all means go for it.

To get these puffs started, simply whip up an easy pancake-like batter, add some chopped green onion, shredded cheddar cheese, and the real bacon pieces.

Scoop the batter into a mini muffin pan {I use a small cookie scoop to make this super easy}, and bake for about 16 minutes.

Serve with some salsa or warmed pizza sauce or spaghetti sauce for dipping, if you'd like, and you'll have a warm-and-delicious snack ready to be gobbled up in a flash.  Hmmmm ... and while I haven't tried it yet ... I bet Bacon Cheddar Puffs would be good with Ranch dressing for dipping, too.  Perfect for those Ranch-lovin' kids out there!  You might even want to sneak in a little bit of finely chopped broccoli ... I tried it, and it tastes great, too.

Now besides being quick, easy, and warm-and-delicious, Bacon Cheddar Puffs are freezer-friendly too.  Make a couple batches when you can, pop them in the freezer, and when you're ready to enjoy, simply thaw and reheat for 5 to 8 minutes in a 350 degree oven.

Bacon Cheddar Puffs

For after school snacks, game day, or party time ~ Bacon Cheddar Puffs are truly simple to prepare and perfect for delicious quick-and-easy snacking.

ingredients:

  • 3/4 c. all-purpose flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 3/4 c. milk
  • 1 egg, lightly beaten
  • 1 (2.8 oz.) package real bacon pieces or bacon bits {approximately 2/3 c.}
  • 1 1/4 c. shredded sharp cheddar cheese
  • 1 T. chopped green onion {approximately 1 green onion}

instructions:

How to cook Bacon Cheddar Puffs

  1. In a large mixing bowl, whisk together flour, baking powder, salt, and garlic powder. Whisk in milk and egg until just combined. Stir in bacon, cheddar cheese, and green onion.
  2. Let batter stand for 10 minutes, and then stir again.
  3. Spray the cups of a 24-cup miniature muffin pan with non-stick cooking spray. Spoon batter into muffin cups, filling each cup to the top. Bake at 375 degrees for 16 to 18 minutes until puffed and golden brown on top.
  4. Serve with salsa or warmed pizza sauce or spaghetti sauce for dipping, if desired.
TRACEY'S NOTES
  1. Bacon Cheddar Puffs are also good with 1/2 cup chopped broccoli added. Thaw frozen broccoli florets and finely chop.
  2. The baked puffs can be frozen. When ready to enjoy, thaw and reheat for 5 to 8 minutes in a 350 degree oven.
