So, what do you get when ravioli, lasagna, black beans, and salsa collide? -- Easy Mexican Ravioli Lasagna, that's what! And one very easy, tasty, and satisfying dinner dish, too.

I came across the base recipe for this Mexican Ravioli Lasagna in a cookbook compiled by the church of one of our family friends. Church and family cookbooks are such fabulous recipe resources -- and always my favorite types of cookbooks to read. I adore reading all the wonderful home-cooking recipe favorites, and picking out so many to try.

With a few minor adjustments to fit our personal tastes, Easy Mexican Ravioli Lasagna has become one of our new favorite go-to easy weeknight dinners. Using frozen cheese ravioli as its base to easily build the lasagna's layers (just like in our very favorite Lazy Lasagna recipe), this dish comes together in a flash.

Jarred salsa as the lasagna's sauce, ground cumin, cilantro, and a topping of melty cheddar cheese bring fabulous flavor to the Tex-Mex lasagna. And black beans bring in the protein for this satisfying meatless meal.

Mexican Ravioli Lasagna Ingredients:

Fortunately, it doesn't take a ton of ingredients to make Mexican Ravioli Lasagna. To whip up a pan, you'll need:
  • Frozen cheese ravioli - Stands in for traditional lasagna noodles and ricotta cheese, forming the foundation and layers of the lasagna. Frozen cheese ravioli can be found with the other frozen pastas in the freezer section of the grocery store.

  • Salsa - Serves as the sauce for the lasagna. Choose your favorite jarred salsa. -- We usually use Pace Medium Chunky Salsa.

  • Tomato sauce - Combines with the salsa to create the lasagna's sauce, and tones down the salsa's spiciness a tad.

  • Ground cumin - Seasons the salsa sauce. We use a full 2 teaspoons of ground cumin, but the amount can easily be adjusted to suit your personal taste.

  • Black beans - Canned black beans bring flavor, "bulk," and protein to the lasagna. Be sure to thoroughly rinse and drain the black beans to reduce their saltiness and to avoid adding too much liquid to the lasagna.

  • Fresh cilantro - Brings nice Tex-Mex flavor to the lasagna. If you're not a fan of cilantro, omit it altogether or substitute fresh parsley.

  • Green onions - Sliced green onions also bring nice flavor to the lasagna.

  • Shredded sharp cheddar cheese - Creates a nice flavorful cheesy top for the lasagna. Pre-shredded sharp cheddar is super convenient, or shred your own from a block if you prefer.

How to Make Mexican Ravioli Lasagna:

A pan of Mexican Ravioli Lasagna comes together quite quickly and easily.

First, whip up a quick sauce of salsa (using whatever "heat" level you desire), tomato sauce, and a touch of ground cumin.  

Spread a teeny bit of salsa sauce in the bottom of a baking dish to keep the bottom layer of ravioli from sticking. Then layer on some thawed frozen cheese ravioli, overlapping just slightly at the edges to make a nice full layer.

Next, create a layer of black beans, green onions, and chopped fresh cilantro.

Top the black beans and cilantro off with another layer of salsa sauce.

Arrange another layer of cheese ravioli on top of the black bean/cilantro layer. Then top it with any remaining salsa sauce.

Finish everything off with a nice layer of shredded sharp cheddar cheese.

Pop the pan in the oven and bake the lasagna until it's melty on the top and a little bubbly around the edges.

Let stand 5 minutes before serving. -- Then dig in to the ravioli-lasagna-black-bean-salsa collision deliciousness. Made quickly and easily taking advantage of frozen cheese ravioli as its base!

Ingredients

  • 1 (24 oz.) jar salsa
  • 1 (8 oz.) can tomato sauce
  • 2 tsp. ground cumin
  • 2 (20 oz.) packages frozen cheese ravioli, thawed
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 c. chopped fresh cilantro
  • 1 bunch green onions, sliced
  • 1 1/2 c. shredded sharp cheddar cheese

Instructions

  1. In a mixing bowl, combine salsa, tomato sauce, and ground cumin. Pour 1/2 cup of the salsa mixture in the bottom of a lightly greased 9 x 13" baking dish.
  2. Arrange the first bag of ravioli evenly over the sauce, covering the entire bottom of the baking dish. Top the ravioli evenly with black beans, green onions, cilantro, and 1 cup of salsa mixture.
  3. Layer the remaining bag of ravioli on top of the black bean/cilantro layer. Top with the remaining salsa mixture; sprinkle evenly with the cheddar cheese.
  4. Bake at 350℉ for 45 minutes. Let stand 5 minutes before serving.
