Around our house if I'm going to serve up a soup, it's got to be a hearty one. Me? I love pretty much any soup. The rest of our family? -- Not so much. Nope, no broth-y soups for them. For them, soups have got to be thick and loaded with stuff. They say -- "I want to chew my dinner, not drink it. Drinking is what my water glass is for."

Okay, so maybe they do have a point.

Fortunately, I have no problem enjoying a great hearty soup, too. And Kielbasa Potato Soup certainly fits that bill.

Chock full of tender chunky potatoes, slices of kielbasa, chopped carrots, celery, and sweet golden corn kernels, this soup is loaded with flavor. A little bit of milk and cheddar cheese make it nice and creamy, too. It's tasty, hearty, and filling, without being too heavy and rich.

Kielbasa Potato Soup Ingredients:

This Kielbasa Potato Soup recipe was given to me by my grandmother many years ago at my bridal shower, because my best friend did the coolest thing for my shower. Knowing that I love to cook and collect recipes, she had every shower guest send her one of their favorite recipes written out on special recipe cards she had made.

She and the other shower hostesses then placed all the recipe cards in a special engraved recipe box they had made just for me. I was truly touched, and treasure these recipe and hand-written recipe cards so much.

To whip up a pot-full of my Gram's Kielbasa Potato Soup, you'll need:

  • Kielbasa (or smoked sausage) - The backbone of this hearty soup. We use Hillshire Farm Turkey Kielbasa or Turkey Smoked Sausage, however beef kielbasa/smoked sausage and other brands work great, as well.

  • Onion - Builds great flavor in the base of the soup. One medium-sized regular yellow onion is needed, but bringing in a little extra with a large onion just brings on that much more flavor!

  • Potatoes - The other backbone of this hearty soup. Six basic yellow potatoes load this soup up with "stuff" and contribute to its satisfying creaminess.

  • Corn - Brings nice texture and a bit of sweetness to the finishes soup. We recommend using frozen corn for the best texture and flavor, but canned corn works as well.

  • Celery & carrots - Help build flavor in the soup's broth. One stalk celery and one carrot are called for in the recipe, but a little more can be used if you'd like.

  • Chicken broth - Forms the base of the soup's broth. Use canned or homemade, if you have it. We recommend and always use Swanson brand canned chicken broth.

  • Seasonings - Salt, pepper, garlic powder, and parsley nicely season and amp up the soup's flavor.

  • Milk - Work alongside the potatoes to create Kielbasa Potato Soup's creaminess. We recommend whole milk for the best, creamiest result, but any type of milk works in this recipe.

  • Shredded cheddar cheese - Contributes flavor and creaminess to the finished soup. We recommend shredding your own from a block of cheddar, rather than using packaged pre-shredded, for the best texture and flavor result.

How to Make Kielbasa Potato Soup:

Fortunately, a pot of Kielbasa Potato Soup is quick and pretty easy to whip up.

Start by browning some sliced kielbasa in a pot for about 4 to 5 minutes, then removing it to a bowl and setting it aside until the end of the soup's cooking time. Then in the same pot, saute some chopped onion until it's softened to start building the soup's flavor base. 

Add cubed potatoes, corn, chopped celery, chopped carrot, chicken broth, garlic powder, salt, and pepper to the pot and bring everything to a boil. Then reduce the heat and simmer everything together for 15 minutes.

Once the 15-minute simmer time is done, add in some milk, shredded cheddar cheese, parsley, and the previously-browned kielbasa. Cook and stir the soup over low heat until everything's heated through and the cheese is melted, which takes only about 2 to 3 minutes.

And you're done! -- That's all there is to it to whipping up a pot of this deliciously hearty and satisfying soup.

  • 1 T. olive oil
  • 1 (13 oz.) fully cooked kielbasa
  • 1 medium onion, diced
  • 6 medium yellow potatoes, peeled and cubed
  • 2 c. frozen corn kernels, thawed
  • 1 stalk celery, sliced
  • 1 medium carrot, chopped
  • 2 c. chicken broth
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. milk
  • 1 c. shredded cheddar cheese
  • 1 tsp. minced parsley

How to cook Kielbasa Potato Soup

  1. Slice kielbasa and then cut slices in half. Place olive oil in a large saucepan and heat over medium-high heat. Brown kielbasa in olive oil, about 4 to 5 minutes; drain and set aside in a bowl.
  2. In the same saucepan, saute onion over medium heat until softened, about 3 minutes. Add potatoes, corn, celery, carrot, broth, garlic powder, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
  3. Add milk, cheese, parsley, and kielbasa. Cook and stir over low heat until heated through and cheese is melted, about 2 to 3 minutes.

  5. Yum! Love the kielbasa in the soup, a great addition. And I agree, it is hard to make pureed soups filling,i end up having to make extra dishes to go with it...too much work. So I mostly make hearty ones around here.

  16. Thank you so much for sharing this recipe. Like most home cooks we all do things to accommodate our families tastes. I boiled the kielbasa with the onions and used the water in the cooking water with the soup. I also added Lawrys seasoned salt, thyme, bay leaf and my secret ingredient was to add 2tsps of yellow mustard. It really enhances the flavor of the kielbasa and the cheese. My daughter had 3 helpings. That's almost a never in my house. It's a keeper and I will use this recipe again and again.
