Around our house if I'm going to serve up a soup, it's got to be a hearty one.  Me?  I love pretty much any soup.  My hubby?  Not so much.  Nope, no broth-y soups for him.  For him, soups have got to be thick and loaded with stuff.
He says ... "I want to chew my dinner, not drink it.  Drinking is what my water glass is for."

Okay, so maybe he does have a point.

Chock full of tender chunky potatoes, slices of kielbasa, chopped carrots, celery, and sweet golden corn kernels, this soup is loaded with flavor.

Fortunately, I have no problem enjoying a great hearty soup, too.  And I love that this Kielbasa Potato Soup certainly fits that bill.

It's tasty, hearty, and filling, without being too heavy and rich.

As a bonus to this soup's fabulous flavor, ~ it can also be on the table in around 35 minutes.  Score.  You've got to love tasty recipes that are quick and easy too, right?

This recipe was given to me by my grandmother at my bridal shower.  Because my best friend did the coolest thing for my shower.

Knowing that I absolutely love to cook and collect recipes, she had every shower guest send her one (or two or three ...) of their favorite recipes written out on special recipe cards she had made.

Serve a bowlful up with some crusty bread or a side salad for one easy and satisfying meal.

She and the other shower hostesses then placed all the recipe cards in a special engraved recipe box they had made just for me.

Isn't that the sweetest gift??  I was truly touched, and treasure these recipes so much.

Kielbasa Potato Soup

  • 1 T. olive oil
  • 1 (13 oz.) fully cooked kielbasa
  • 1 medium onion, diced
  • 6 medium yellow potatoes, peeled and cubed
  • 2 c. frozen corn kernels, thawed
  • 1 stalk celery, sliced
  • 1 medium carrot, chopped
  • 2 c. chicken broth
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. milk
  • 1 c. shredded cheddar cheese
  • 1 tsp. minced parsley


How to cook Kielbasa Potato Soup

  1. Slice kielbasa and then cut slices in half. Place olive oil in a large saucepan and heat over medium-high heat. Brown kielbasa in olive oil, about 4 to 5 minutes; drain and set aside in a bowl.
  2. In the same saucepan, saute onion over medium heat until softened, about 3 minutes. Add potatoes, corn, celery, carrot, broth, garlic powder, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
  3. Add milk, cheese, parsley, and kielbasa. Cook and stir over low heat until heated through and cheese is melted, about 2 to 3 minutes.

  5. Yum! Love the kielbasa in the soup, a great addition. And I agree, it is hard to make pureed soups filling,i end up having to make extra dishes to go with it...too much work. So I mostly make hearty ones around here.

  16. Thank you so much for sharing this recipe. Like most home cooks we all do things to accommodate our families tastes. I boiled the kielbasa with the onions and used the water in the cooking water with the soup. I also added Lawrys seasoned salt, thyme, bay leaf and my secret ingredient was to add 2tsps of yellow mustard. It really enhances the flavor of the kielbasa and the cheese. My daughter had 3 helpings. That's almost a never in my house. It's a keeper and I will use this recipe again and again.
