It's almost game time for the BIG game!

Due to my hubby's, shall we say, ... lack of like ... for watching football, I don't watch much football during the regular season.  Much to my dismay, because I love  to watch football.

But the play-offs and Super Bowl are a completely different story!  These  I watch.

And guess what?  The hubby usually watches, too.

The saltiness from the bacon, creaminess from the avocado and sour cream, and hint of tartness from fresh lime juice are a combination that just can't be beat.

Why? ... Because I make great food to accompany the game watching, of course.  Because isn't gameday watching almost as much about having great snacks to nibble on as it is about watching a great game?

Okay, so I know many will debate me on that.  But I think we can all agree that gameday snacks make a great game even that much better.

Like this Creamy Bacon Guacamole Dip with tortilla chips or hearty mini taco snacks for dipping.

Yes, sometimes I like to switch things up and use mini tacos as dippers.  They're an easy and filling way to feed a crowd for the big game.  Not to mention, they're hefty enough to hold a huge scoop of this bacon-loaded guacamole.

This creamy Bacon Guacamole Dip gets its extra creaminess from a good old standby dip ingredient ~ sour cream.  Stirring about a cup of sour cream into the guacamole gives a nice smooth and creamy texture.  And really turns it into more of a dip consistency than regular guacamole is.

This Bacon Guacamole Dip?  It takes guacamole to whole new level.

Crumbled crisp bacon both stirred into the guacamole dip and sprinkled on top brings fabulous flavor.  The saltiness from the bacon, creaminess from the avocado and sour cream, and hint of tartness from fresh lime juice are a combination that just can't be beat.

Sure, I adore regular guacamole.  It's one of my absolute favorites.

It takes guacamole to whole new level.

Hmmmm, I think I'll be keeping this Creamy Bacon Guacamole Dip for dippin' in mind for my March Madness viewing, too.

Now March Madness ... as long as ACC teams are still in, that  I have no problem getting the hubby to watch with me.

Creamy Bacon Guacamole Dip

Give guacamole a tasty new twist ... by changing it up into Creamy Bacon Guacamole Dip! Bacon adds such wonderful flavor to this gameday favorite.

ingredients:

  • 2 avocados, pitted & peeled
  • 1 c. sour cream
  • 3 T. fresh lime juice {approximately 1 and 1/2 limes}
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 8 drops Tabasco sauce
  • 2 slices bacon, cooked & crumbled

instructions:

How to cook Creamy Bacon Guacamole Dip

  1. Place avocado and lime juice in a mixing bowl; mash with a fork {getting the avocado coated with lime juice helps the avocado retain its green color instead of turning brown}. Add sour cream, salt, pepper, and Tabasco; stir until well combined. Stir in crumbled bacon, reserving a few bacon crumbles to garnish the top.
  2. Cover and refrigerate for about 30 minutes to allow flavors to meld.
  3. Sprinkle reserved bacon crumbles on top just before serving. Serve with tortilla chips, assorted veggies, or warm mini tacos for dipping.
TRACEY'S NOTES
  1. If you'd like a smoother-textured dip, process all ingredients {except bacon} in a food processor, then stir in the crumbled bacon.
