It only takes 4 ingredients to make easy Pumpkin Ice Cream. To whip up a
batch, you'll need:
- Vanilla ice cream - A 1 & 1/2-quart container of vanilla ice cream serves as the creamy base of easy Pumpkin Ice Cream. Any brand of plain vanilla ice cream will work -- choose your favorite.
- Pumpkin - It wouldn't be pumpkin ice cream without the pumpkin! Canned 100% pure pumpkin (conveniently) brings the ice cream's pumpkin element. Be sure to grab 100% pure pumpkin, not canned pumpkin pie filling, when shopping at the store.
- Brown sugar - Sweetens up the pumpkin just a bit, creating really nice flavor in the finished ice cream.
- Pumpkin pie spice - Spices up the ice cream mixture (literally!), delivering up fabulous pumpkin spice flavor in every bite. Adjust the amount of pumpkin pie spice in the recipe to suit your personal taste.
How to Make Easy Pumpkin Ice Cream:
Whipping up a batch of no-churn pumpkin ice cream truly couldn't be
any easier!
To get a batch started, first soften a container of vanilla ice cream.
I find the best way to soften ice cream (without it becoming too
melted) is in the refrigerator. -- Simply transfer the vanilla ice cream from the freezer to the
refrigerator for about 25-30 minutes before using. Or, you can let it
stand at room temperature for about 15 minutes, but somehow when I do
this it always turns out too melted for me.
While the vanilla ice cream is softening, stir together a can of 100%
pure pumpkin, brown sugar, and some pumpkin pie spice.
Fold in the softened vanilla ice cream until everything's well combined
and the mixture is uniform in color.
Then cover and freeze. -- That's it! Whipping up this tasty pumpkin
deliciousness is truly that easy.
Be aware that, due to the addition of the pumpkin and brown sugar,
the texture of the re-frozen ice cream won't be quite as smooth as
that of the plain vanilla ice cream alone. The pumpkin ice cream
re-freezes firmer than the vanilla ice cream was on its own, and
will be a little bit of an icier texture.
When it's time to enjoy, place the Pumpkin Ice Cream in the refrigerator for about 20-25 minutes to soften a bit before
serving. -- This makes for easier scooping and a creamier texture.

Ingredients
- 1 & 1/2 quarts vanilla ice cream, softened (a 48 oz. container)
- 1 (15 oz.) can 100% pure pumpkin puree (1 3/4 c.)
- 1/2 c. brown sugar
- 1 1/2 to 2 tsp. pumpkin pie spice
Instructions
- In a large freezer-safe mixing bowl or container, stir together pumpkin, brown sugar, and pumpkin pie spice until well combined.
- Fold in softened ice cream until well combined and mixture is uniform in color.
- Cover and freeze.

- I love this easy pumpkin ice cream with the full 2 teaspoons of pumpkin pie spice, however others in our family feel it is too much. If you love pumpkin spice, I recommend using the full 2 teaspoons. If you like pumpkin spice more on the milder side, use 1 & 1/2 teaspoons.
