Cinnamon Sugar Donut Hole Muffins are pretty easy to make. -- Just mix, scoop, bake, and coat in cinnamon-sugar.

To get a batch started, mix up a basic buttermilk batter. As with most baked goods (especially muffins), when adding the flour mixture to the wet ingredients stir everything together until they're just barely combined. Do not overmix, as overmixing can result in tough -- rather than tender -- baked muffins.

Use either a 1-tablespoon cookie scoop or a tablespoon measuring spoon to scoop 1 tablespoon of batter for each Donut Hole Muffin. Spray the scoop or spoon with non-stick cooking spray so the batter will slide out easily.

Then place the scooped batter in the cups of a mini muffin pan.

Pop the pan in the oven and bake the muffins for 10 minutes, until a toothpick inserted in the center comes out clean. Place the muffin tin on a cooling rack and let the muffins cool in the pan for 10 minutes.

After the 10 minutes of cooling, remove the muffins from the pan and place them directly on the cooling rack. Place the cooling rack inside a rimmed baking sheet -- the baking sheet will catch the butter and cinnamon-sugar spillover as you coat the muffins. If you do not have a rimmed baking sheet large enough to set the cooling rack into, you can place a layer of wax paper under the cooling rack to catch the spillover instead.

Working with about 4 muffins at a time, use a pastry brush to cover each muffin in melted butter.

Then, while the butter is still wet, roll each buttered muffin in cinnamon sugar to coat.

Ingredients

For the donuts:
  • 1 1/3 c. all-purpose flour
  • 2 T. cornstarch
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/2 c. granulated sugar
  • 1/2 c. buttermilk
  • 4 T. unsalted butter, melted
  • 1 whole egg + 1 egg yolk
For the topping:

To prepare the donut muffins:
  1. In a medium bowl, whisk together the flour, cornstarch, baking powder, salt, nutmeg, and sugar. Set aside.
  2. In a large bowl, whisk together the buttermilk, melted butter, whole egg, and egg yolk until well combined. Add the flour mixture and stir together until just combined. Do not overmix.
  3. Spray a 24-piece mini muffin pan with non-stick spray. Spoon 1 tablespoon of batter into each muffin tin cup.
  4. Bake at 400 for 10 minutes, until a toothpick inserted in the center comes out clean.
  5. Place muffin tin on a cooling rack and let muffins cool in the pan for 10 minutes before coating in cinnamon-sugar.
For the topping:
  1. In a small bowl, stir together cinnamon and sugar until well combined.
  2. In a separate small bowl, melt butter.
  3. Once muffins have cooled for 10 minutes, remove from the pan and place directly on the cooling rack; place the cooling rack inside a rimmed baking sheet. Working with about 4 muffins at a time, use a pastry brush to cover each muffin in melted butter. Then, while the butter is still wet, roll each muffin in cinnamon sugar to coat.
  4. Serve warm or at room temperature.
