Ingredients
Cookie Dough:
- 1 (15.25 oz.) box butter pecan cake mix
- 1/3 c. sour cream
- 1/4 c. canola or vegetable oil
- 1 egg
- 3/4 c. chopped pecans
- 3/4 c. butterscotch chips
For Rolling:
- 1/4 c. granulated sugar
- 1 tsp. ground cinnamon
Instructions
- In a large mixing bowl, whisk together sour cream, canola oil, and egg until well combined. Stir in cake mix until just combined. Then, stir in chopped pecans and butterscotch chips.
- In a small bowl, whisk together granulated sugar and ground cinnamon.
- Using a 2-tablespoon cookie scoop, scoop cookie dough and roll into balls. Roll each ball in cinnamon-sugar mixture and place 2 inches apart on ungreased cookie sheets.
- Bake at 375℉ for 11-13 minutes, until set in the center and lightly browned.
- Let cool on pan for 5 minutes, then remove to a wire rack to cool completely.
