White cake mix provides an easy and convenient base to whip up a batch of tasty Cake Mix Sugar Cookies. Just combine the cake mix with some eggs and oil, scoop the dough onto baking sheets, sprinkle the tops with sugar, and pop the pans in the oven to bake up a quick and easy batch. It takes just 4 super simple ingredients to make Cake Mix Sugar Cookies. To whip up a batch, you'll need:

  • White cake mix - A standard 15.25-ounce box of basic white cake mix creates the foundation of the cookies. We recommend sticking with white cake mix instead of yellow because white cake mix bakes up with better sugar cookie flavor and a more crackly cookie top.

  • Canola oil - Adds the fat needed for the cookies. You can use vegetable oil instead, if you'd like.

  • Eggs - Two eggs provide the moisture and leavening needed for the cookie's dough.

  • Granulated sugar - Granulated sugar is sprinkled on top of each cookie before baking, simulating traditional sugar cookies' signature rolling in sugar.

How to Make Cake Mix Sugar Cookies:

Cake Mix Sugar Cookies truly couldn't be much easier to make! To get started, simply beat together a box of dry white cake mix, a bit of canola oil, and a couple of eggs until the mixture is smooth.

This dough is quite soft, and too soft to roll into balls as is typically done when making traditional sugar cookies. So instead, drop or use a cookie scoop to scoop 2 tablespoonfuls of dough per cookie onto a lightly greased cookie sheet. 

Be sure to place only 9 cookies per sheet and leave at least 2 inches between each cookie because this dough spreads a good bit while baking. -- When baked up, each cookie will turn into a pretty good-sized circle.

Sprinkle the tops of the scooped dough generously with granulated sugar. -- This mimics the sugary coating usually achieved when rolling traditional sugar cookie dough balls in sugar before baking.

Pop the pan in the oven and bake the cookies for about 7 to 8 minutes.

The Cake Mix Sugar Cookies will spread a good bit, baking up into big, thin, very soft and chewy cookies with beautifully crackled tops. We typically bake ours for 7 to 7 1/2 minutes, to create the super soft texture we love.

Once out of the oven, let the cookies stand on the baking sheet for about 30 seconds to firm up just a tad. Then gently scrape each cookie loose from the pan all around with a small spatula before lifting them from the pan to a cooling rack to cool completely.

Since these cookies are so large and soft, they truly do need that little bit of coaxing loose from the pan before lifting them off. -- Without it, they are prone to sticking and/or breaking.

Ingredients

  • 1 (15.25 oz.) box white cake mix
  • 2 eggs
  • 1/3 c. canola oil
  • about 2 T. granulated sugar

Instructions

  1. In a large mixing bowl, beat together dry cake mix, oil, and eggs until smooth.
  2. Drop or use a cookie scoop to scoop 2 tablespoonfuls of dough onto lightly greased cookie sheets, placing only 9 cookies per sheet and leaving at least 2 inches between cookies (this dough spreads a good bit while baking).
