- Eggs - Two eggs provide the moisture and leavening needed for the cookie's dough.

        To get a batch started, combine dry yellow cake mix, old-fashioned oats, some sugar, ground
          cinnamon, and ground nutmeg in a large mixing bowl, stirring them all
          together until everything's well combined.
      
      
        In a separate bowl, whisk together some canola oil, 2 eggs, and a
          small bit of vanilla extract. Add this wet ingredient mixture to the
          dry ingredients and mix until it's all combined.

- 1 (15.25 oz.) box yellow cake mix
- 2 c. old-fashioned oats
- 1/4 c. granulated sugar
- 2/3 c. canola (or vegetable) oil

- 1 tsp. ground cinnamon
- 1/16 tsp. ground nutmeg
Instructions
- In a large mixing bowl, combine dry cake mix, oats, sugar, cinnamon, and nutmeg. Stir until well combined.
- In a separate bowl, whisk together oil, eggs, and vanilla extract. Add to dry ingredients and mix until combined.

        - Quick oats may be substituted for the old-fashioned oats, though quick oats create a less chewy texture in the finished baked cookies.
- You can leave out the cinnamon and/or nutmeg, if you prefer, and the cookies will still taste great. We just think they taste even better with them both in there!
- Stir in 1 cup of raisins or coarsely chopped pecans as add-ins, if you'd like.

DeleteI made these last night SO SO GOOD! I did add the raisins (because we happen to love them). They are even better the next day! I do suggest pressing down the dough a little bit before baking, the first batch stayed "domed", but they were still good. I just printed the recipe...I "pin" a lot of recipes...but the good ones get printed!
