- Chicken breast - Two boneless skinless chicken breast halves form the foundation of the dish. Boneless chicken thighs can be substituted, if you prefer.
- Cajun seasoning - Brings the signature Cajun flavor to the dish. We usually use Old Bay Seasoning, and have also used Chef Paul Prudhomme's Seafood Magic.
- Butter - Provides a rich and flavorful base for sauteing the recipe's onion, garlic, and seasoned chicken.
- Linguine noodles - Serves as the pasta base of the dish. These wider-than-spaghetti noodles provide a good amount of surface area for the creamy sauce to cling to. That being said, spaghetti or fettuccini noodles can be substituted.
- Onion & green onion - A mix of slivered onion and chopped green onion bring both flavor and color to the dish.
- Garlic - A clove of fresh garlic nicely flavors the sauce. We recommend sticking with fresh garlic, rather than substituting garlic powder for the best result.
- Sun-dried tomatoes - Chopped sun-dried tomatoes add fabulous flavor and a pop of color to the finished dish.
- Heavy whipping cream - Forms the base of Creamy Cajun Chicken Pasta's signature creamy sauce. Stick with heavy cream to get the best texture. Substitutions (such as half-and-half or regular milk) just won't produce the same thick, creamy result.
- Parmesan cheese - Combines with the heavy whipping cream to create and flavor the creamy sauce. Grated Parmesan (rather than shredded) works best to help thicken the sauce.

comes together, with just a little chopping and slicing, in all of

To get this dish started, slice two boneless skinless chicken breast
halves into thin strips.
Place the chicken strips in a bowl and season with a sprinkling of salt and pepper. Then add
Old Bay seasoning and toss to get them coated.
Heat a large skillet (that's big enough to fit the chicken strips
in a single layer) over medium heat. Melt some butter in the
skillet, and then saute some onion, garlic, and the seasoned chicken
strips until the chicken is cooked through and tender.
Add in some chopped green onion, heavy whipping cream, sun-dried
tomatoes, dried basil, salt, pepper, and grated Parmesan to create
the dish's signature creamy sauce.
Gently simmer the sauce for about 3-5 minutes until it's slightly
thickened.
Then add in hot cooked linguine, tossing everything together to
nicely coat the noodles with sauce. Sprinkle the top with some
additional Parmesan, if you'd like, and you're good to go with
serving up this creamy Cajun deliciousness.

Ingredients
- 2 boneless skinless chicken breast halves, cut into thin strips
- 8 oz. linguine, cooked
- 2 1/2 tsp. Old Bay or other Cajun seasoning
- 1 small onion, cut into thin slivers
- 1 clove garlic
- 2 T. butter
- 2 green onions, thinly sliced
- 1 c. heavy whipping cream
- 3 T. chopped sun-dried tomatoes
- 1/2 tsp. dried basil
- 1/4 tsp. salt (or to taste)
- 1/8 tsp. black pepper
- 1/3 c. grated Parmesan cheese
Instructions
- Place thinly-sliced chicken strips in a bowl and season with a sprinkling of salt and pepper. Add Old Bay seasoning and toss to coat.
- Heat a large skillet (large enough to fit the chicken strips in a single layer) over medium heat. Melt butter in the skillet, add onion and garlic, and saute 2 minutes until softened.
- Add chicken to the skillet. Saute until chicken is cooked through and tender, about 5 - 7 minutes.
- Reduce heat. Add green onion, heavy whipping cream, sun-dried tomatoes, dried basil, salt, and pepper. Bring to a gentle simmer.
- Stir in grated Parmesan. Simmer gently for 3 - 5 minutes, until slightly thickened.
- Add hot cooked linguine; toss to coat. Sprinkle top with additional Parmesan, if you'd like.
