My family loves boneless chicken thighs. -- And they go absolutely NUTS for these baked homemade Shake & Bake chicken thighs. It's one dinner dish I know for sure will be met with happy forks.
And I love the recipe just as much as they do, because it comes together super quickly and easily, too. Homemade Shake & Bake chicken thighs is a dinner choice I know I can get in the oven with only about 10 to 15 minutes of prep, and on the table not too long after that.
Coated in a homemade version of classic Shake & Bake coating mix, these chicken thighs are easy to make, loaded with flavor, and absolutely sure to be a family favorite.
The homemade Shake & Bake coating on the chicken thighs is an easy copycat version of the classic pantry staple we all know and love. It comes together really quickly with just some plain bread crumbs and a handful of spices. Measure, mix, toss in a ziploc bag, and you're good to go.
From there, just toss the chicken pieces in with the coating and bake them up for about 25 to 30 minutes. It's truly as simple as that to make this full-of-flavor family favorite.
But what if you'd rather have bone-in chicken thighs? Or boneless chicken breasts? -- No problem. This recipe is versatile, and works just as well with other types of chicken, too.
Use the coating mix for bone-in chicken thighs, boneless or bone-in chicken breasts, chicken tenders, or even to make your own homemade chicken nuggets -- which are our daughter's favorite. And hey, it works for boneless or bone-in pork chops, as well.

Homemade Shake & Bake Chicken Thighs Ingredients:
Homemade Shake & Bake Chicken Thighs are super simple to make and are loaded with fabulous flavor from the combination of spices in the coating. To whip up a batch, you'll need:
- Boneless, skinless chicken thighs
- Plain dried bread crumbs - Use store-bought or make your own. I always use store-bought for convenience.
- Salt & pepper
- Granulated garlic or garlic powder
- Onion powder
- Paprika
- Dried parsley
- Chili powder
- Dried oregano
- Dried thyme
- Granulated sugar
- Canola or vegetable oil
How to Make Homemade Shake & Bake Chicken Thighs:
There are three basic steps to this recipe, each of which is super easy:
- Make the homemade Shake & Bake coating mix
- Coat the chicken, and
- Bake
To make the homemade Shake & Bake coating mix, place some plain bread crumbs in a mixing bowl. You can make your own bread crumbs, if you'd like, but I just use store-bought plain bread crumbs for ease and convenience.
Add in all the seasonings and mix everything together well. Then slowly drizzle and whisk in a little bit of canola oil until the mixture is thoroughly combined. The oil helps the mixture clump together a bit and helps it bake up nice and crunchy on the chicken.
To coat the chicken, start by seasoning the chicken thighs on both sides with a light sprinkling of salt and pepper. Even though the homemade Shake & Bake coating has salt and pepper in it, we find that also seasoning the chicken itself with salt and pepper greatly enhances the baked chicken's flavor.
Spoon the prepared Shake & Bake coating into a gallon-sized ziploc bag.
Then place 2 to 3 pieces of the uncooked seasoned chicken thighs at a time in the ziploc bag with coating mix. Seal the bag with air in it to allow the meat some room to move around.
Shake the sealed bag until the meat is thoroughly coated.
Then place the coated chicken on a baking pan lightly coated with non-stick cooking spray, arranging the pieces at least 1-inch apart.
Bake at 400℉ for 25-30 minutes, until the coating is lightly browned and the chicken is cooked through.
Then serve it up for a delicious (and easy!) dinner that's sure to be loved by all!

Ingredients
Chicken:
- 1 & 1/2 to 2 lbs. boneless, skinless chicken thighs
Homemade Shake & Bake coating mix:
- 1 c. plain dried bread crumbs
- 1 & 1/4 tsp. salt
- 1 & 1/4 tsp. granulated garlic or garlic powder
- 3/4 tsp. onion powder
- 3/4 tsp. granulated sugar
- 1/2 tsp. paprika
- 1/4 tsp. dried parsley
- 1/4 tsp. black pepper
- 1/4 tsp. chili powder
- 1/4 tsp. oregano
- 1/8 tsp. dried thyme
- 1 & 1/2 T. canola or vegetable oil
Instructions
Prepare Shake & Bake coating mix:
- In a mixing bowl, combine bread crumbs and all seasonings (salt, granulated garlic, onion powder, sugar, paprika, parsley, pepper, chili powder, oregano, and thyme). Mix well.
- Slowly drizzle and whisk in canola oil until thoroughly combined.
Prepare and bake chicken:
- Line a rimmed jelly-roll baking sheet with foil and spray foil very lightly with non-stick cooking spray.
- Spoon prepared Shake & Bake coating into a gallon-sized ziploc bag.

- Place 2 to 3 pieces uncooked seasoned chicken at a time in ziploc bag with coating mix. Seal bag with air in it to allow meat room to move around. Shake until meat is thoroughly coated.
