- 3 c. dry egg noodles
- 4 T. unsalted butter
- 1 large onion, finely chopped
- 2 cloves garlic, finely minced
- 2 medium carrots, peeled & diced
- 1 stalk celery, sliced
- 3/4 c. frozen peas, thawed
- 3 T. all-purpose flour
- 1 c. chicken broth
- 1 1/4 c. whole milk
- 1 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. dried thyme
- 1/4 tsp. dried sage
- 2 to 3 c. fully cooked chopped or shredded chicken
Instructions
- In a large pot of salted boiling water, cook egg noodles according to package directions. Drain.
- While noodles cook, melt butter in a large skillet over medium heat. Add onion, garlic, carrots, and celery. Saute gently for 8-10 minutes until tender and onions are translucent.
- Add flour to skillet and stir into vegetables.
- Gradually whisk in chicken broth and whole milk. Add salt, pepper, dried thyme, dried sage, and thawed peas. Bring to a simmer and cook 3-4 minutes, stirring very frequently, until sauce thickens.
