Who doesn't love fluff salads? I mean, is there anything that says pure creamy comfort more than a bowlful of fluff? 

You know the stuff -- those "salads" that aren't really salad, and typically include a combination of whipped cream, marshmallows, pudding mix, and some form of fruit. And whether it's classic orange fluff, green (pistachio) fluff, old-fashioned seafoam salad, or lesser-known peach fluff, we just seem to love them all.

And while I do indeed love them all, my absolute favorite is this creamy Pineapple Fluff. While pineapple plays a role in so many of the classic fluff recipes, it's usually a background filler role. -- It's stirred in to lend body to the fluff, but doesn't really jump out as a flavor. 

But in this straight-up Pineapple Fluff, the pineapple itself is allowed to shine! And I love it.

Whip up a bowlful as a side dish or dessert, and serve it up at potlucks or family dinners. -- This creamy deliciousness is perfect for them all.

The pudding element of this Pineapple Fluff recipe is, a bit surprisingly, lemon instant pudding. Given this, you would think lemon flavor would take over the fluff and overpower the pineapple. -- But it doesn't. The lemon flavor is subtle, and somehow works to enhance the fluff's pineapple flavor while not overshadowing it in the least. Somehow, it all just works to create a fabulously-flavored fluff that our family adores.

Now you can use vanilla instant pudding instead of the lemon, if you'd like, and it still makes for a very tasty Pineapple Fluff. We've made it both ways, and while both taste great, we love Pineapple Fluff best with the lemon pudding. (But believe me, we certainly wouldn't turn down a bowl of the stuff made with vanilla pudding, though!)

Pineapple Fluff Ingredients:

Five very simple ingredients is all it takes to whip up a delicious bowlful of creamy Pineapple Fluff. To make a batch, you'll need:

  • Crushed pineapple - Use a 20-ounce can of crushed pineapple + its juice as the base of the fluff.

  • Instant lemon pudding - Gives flavor and "structure" to the fluff. You can use regular or sugar-free instant lemon pudding in this recipe, as both work just fine. Vanilla instant pudding can be substituted for the lemon. -- Both taste great, though we do love this fluff best with lemon pudding.

  • Mini marshmallows - A fluff recipe staple ingredient.  Brings a springy little textural element and sweetness to the fluff.

  • Cool Whip non-dairy whipped topping - Brings the fluff's creaminess.  Substitute freshly-whipped homemade whipped cream, if you prefer.

  • Mandarin oranges - Adds a nice flavor and textural element to the finished fluff.

How to Make Pineapple Fluff:

Whipping up a bowlful of Pineapple Fluff truly couldn't be any easier. If you can open a can and stir, you can make this creamy deliciousness.

To get started, in a mixing bowl simply combine a can of crushed pineapple (including its juice) with a package of dry lemon pudding mix. Stir these together until they're well mixed. Then stir in some mini marshmallows, and fold in a container of Cool Whip.

Once everything's well combined, gently fold in drained mandarin oranges. 

How to Make Pineapple Fluff Image

Cover and refrigerate the fluff for at least 2 hours (or overnight), to allow the flavors to meld and the marshmallows to soften.

Then you're good to go with enjoying Pineapple Fluff's creamy deliciousness! Serve it up as a side dish or dessert, and at potlucks or family dinners. -- Because this creamy Pineapple Fluff is simply perfect for them all.

Ingredients

  • 1 (20 oz.) can crushed pineapple + its juice
  • 1 (11 oz. or 15 oz.) mandarin oranges, drained
  • 1 (3 oz.) package instant lemon pudding
  • 2 c. mini marshmallows
  • 1 (8 oz.) container Cool Whip non-dairy whipped topping

Instructions

  1. In a mixing bowl, combine crushed pineapple (with its juice) and dry lemon pudding mix. Stir until well mixed. Stir in marshmallows, then fold in Cool Whip.
  2. Gently fold in mandarin oranges.
  3. Cover and refrigerate for at least 2 hours (or overnight), before serving.
