Using a lemon cake mix as their base, these crinkle cookies come together really quickly and easily.  And the full-on lemon flavor they deliver up? - It's nothing short of fabulous.  

That luscious lemon flavor comes from a combination of fresh lemon juice, finely chopped lemon zest, and the cookies' lemon cake mix base. The lemon juice and zest amp up the flavor of the cake mix, delivering a clear and pronounced lemon flavor not possible with the cake mix alone.  And with that pronounced lemon flavor, if you're a lemon lover these lemon crinkle cookies are definitely for you.

We've had a great deal of fun and success in our kitchen baking cake mix cookies. -- Our 11-year-old daughter especially loves them because they're something she can easily (and very successfully!) make on her own. They give her a big sense of accomplishment in the kitchen, which is so great in building her kitchen skills and confidence.

So when we started looking to make these Lemon Crinkle Cake Mix Cookies to give our daughter another recipe in her repertoire, all the recipes we came across called for an 18-ounce box of lemon cake mix.  Well as I'm sure you know, cake mixes are no longer packaged in an 18-ounce size. -- Nope, the new size in recent years is now 15.25 ounces.

We tackled this problem in our batches, and went about figuring out how to whip up these delicious cake mix cookies accounting for the smaller cake mix size. The Lemon Crinkle Cake Mix Cookies recipe we're sharing has been adjusted to work with the newer, smaller 15.25-ounce boxes of cake mix. 

Turns out -- You just need to add 1/4 cup of all-purpose flour to the smaller 15.25-ounce cake mix to adjust away from the 18-ounce cake mix. This bit of added flour makes the recipe's proportions work out right. 

That's a pretty easy fix, right?  Oh, about as easy as whipping up a batch of these delicious cookies, I'd say.

Lemon Crinkle Cake Mix Cookie Ingredients:

It's a pretty short ingredient list for these Lemon Crinkle Cake Mix Cookies.  To whip up a batch, you'll need:


  • All-purpose flour - A bit of all-purpose flour, 1/4 cup to be exact, is added to the cake mix to make the recipe's proportions work out right. It also prevents the dough from being too sticky to work with.

  • Canola or vegetable oil - Brings the mixture together into a dough and provides the fat for tender cookies.

Start by mixing up a simple dough. -- In a mixing bowl, combine dry lemon cake mix, a bit of all-purpose flour, some oil, eggs, fresh lemon juice, and lemon zest. Stir this all together until the mixture comes together to form a dough.

The dough will be sticky, so refrigerate it for about 20 minutes to make it easier to work with.

Then, scoop the dough and shape it with your hands into one-inch balls.

Then roll each dough ball in powdered sugar, coating it completely.

The dough will be a bit sticky, so don't worry about rolling it into perfect balls to roll into the powdered sugar. -- Just get it roughly into balls, and then shape it up a bit more once coated in the confectioners' sugar.

Place the sugar-covered dough balls on an ungreased cookie sheet about 2 inches apart. Then, bake them up for about 9-11 minutes until they're crackled and set.

Cool the baked cookies on the pan for 1 minute, and then remove them to a cooling rack to cool completely.

Then you're good to go to enjoy their lemony deliciousness!

Ingredients

  • 1 (15.25 oz.) box lemon cake mix
  • 1/4 c. all-purpose flour
  • 1/4 c. canola or vegetable oil
  • 2 eggs
  • 1 T. fresh lemon juice
  • 1-2 tsp. finely chopped lemon zest
  • about 1/4 c. powdered sugar, for rolling

Instructions

  1. In a large mixing bowl, stir together dry cake mix and flour.  Add oil, eggs, lemon juice, and lemon zest; stir until the mixture comes together to form a dough.
  2. Cover and refrigerate for 20 minutes to make dough easier to work with for rolling.
  3. Use your hands to roll dough into 1-inch balls. Place powdered sugar in a small bowl and roll each dough ball in powdered sugar, coating it completely.
  4. Place sugar-covered dough balls on an ungreased cookie sheet about 2 inches apart. Bake at 350℉ for 9-11 minutes or until set.
  5. Cool on pan for 1 minute; remove to a cooling rack and cool completely.
  6. Store tightly covered in an airtight container.
TRACEY'S NOTES:
  1. 1 lemon works perfectly for this recipe. -- Zest the lemon first before cutting into it. Then once zested, cut it in half to juice it.
  2. The dough will be a bit sticky. Don't worry about rolling it into perfect balls to roll into the confectioners' sugar. -- Just get it roughly into balls, and then shape it up a bit more once coated in confectioners' sugar.
  3. We use Duncan Hines Signature Perfectly Moist Lemon Supreme cake mix.
