I'm a sucker for tortellini.  And a sucker for hearty, loaded, flavorful soups.  So when you put those two together? -- I'm totally here for it.

And since this Sausage Tortellini Soup is loaded up with savory Italian sausage, chopped kale, and tender cheese-filled tortellini, it completely nails the hearty and loaded category.  Then when its creamy tomato-based broth mixes with the tortellini and spices of the Italian sausage? -- It completely nails the flavorful part, too.

Broth-y soups without much "stuff" in them don't cut it around our house.  I can certainly enjoy one here and there, but my husband and daughter certainly do not.  If I'm serving up soup for them, it's got to be thick, hearty, and loaded with stuff.  

They say they like to chew their dinner, not drink it. Point taken.

I'm happy to report, this Sausage Tortellini Soup not only scores points with me as a tortellini lover, it also passes my family's hearty-and-loaded test.  Full of fabulous flavor, and loaded up with sausage, kale, and cheese tortellini, a bowlful makes for one satisfying meal, for sure.

And as far as soups go, it develops all that fabulous flavor pretty quickly, too.  A tasty pot of Sausage Tortellini Soup is ready start-to-finish in about 45 minutes.  After browning the sausage, it only requires about a 15-minute simmer with the liquid ingredients to bring its flavors together.

Then another 5 to 8 minutes to cook the kale and tortellini? -- And you're good to go.

It's truly surprising to me (in a good way) that a soup this flavorful can come together so quickly, no long simmer involved.  It makes Sausage Tortellini Soup a fabulous weeknight-dinner choice that our family will be enjoying over and over for a long time to come.

Sausage Tortellini Soup Ingredients:

To whip up a pot of flavor-loaded Sausage Tortellini Soup, you'll need:

  • Mild Italian sausage - Purchase ground mild Italian sausage. If it's available only in link form, remove the sausage from its casings prior to cooking. You can substitute mild regular bulk sausage if you'd like. -- Italian sausage has a bit more spice and brings more robust flavor, but both types of sausage do taste delicious in this soup.

  • Cheese tortellini - Use fresh or frozen tortellini, not dried.

  • Chopped kale - Use four to six cups of coarsely chopped kale, or even a little bit more if you'd like.  One small bunch of kale yields plenty enough for this recipe. 

  • Chicken broth - Forms the base of the soup's broth.  Use your favorite brand or make your own homemade chicken broth, if you'd like. For convenience, I use Swanson brand chicken broth -- it's my favorite packaged broth.

  • Petite diced tomatoes & tomato paste - Together, these turn the soup's base into a rich tomato broth.  We recommend petite-diced tomatoes to blend better into the liquid and help build the tomato richness of the broth, rather than simply contributing larger tomato chunks to the soup.

  • Onion & fresh garlic - Bring wonderful flavor to the soup.

  • Heavy cream - Brings richness and creaminess to the broth, as well as helps to thicken it. You can substitute half-&-half if you'd like, but we do much prefer this soup finished off with heavy cream.

How to Make Sausage Tortellini Soup:

As far as soups go, Sausage Tortellini Soup comes together pretty quickly. -- Especially for a soup that packs as much flavor as this one does.  You can have a pot done and ready to serve in about 45 minutes, start-to-finish.

Begin by browning Italian sausage together with onion and fresh garlic. The recipe calls for 2 cloves of fresh garlic, but you could add even another clove if you're a big a garlic fan.

Once you've browned the sausage, drain off any excessive amount of fat, if needed.  I've found when using high-quality Italian sausage, more often than not, there's really not even enough fat to warrant draining.  Judge based on what's in the bottom of your pot.

Then add chicken broth, a can of petite diced tomatoes, tomato paste, and a little salt to the pot.  Bring this mixture to a boil, then reduce the heat and let this simmer for 15 minutes.

Next, add in chopped kale and the tortellini. Simmer these for about 3-5 minutes until the kale is wilted and the tortellini is tender.  It truly doesn't take long at all for the kale and tortellini to cook.

It'll feel like it's a ton of kale going into the pot, but the kale quickly wilts down a lot.  It doesn't take over the pot of soup, I promise.

Finally, finish the soup off by adding in some heavy cream.  This brings wonderful creaminess to the soup, and also helps in thickening up the broth.

Let the heavy cream heat through, which takes only about 2 to 3 minutes.

Then, you're good to go with serving up the deliciousness!  And oh, deliciousness it is indeed.

Ingredients

  • 1 lb. ground mild Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 5 c. chicken broth
  • 1 (14 oz.) can petite diced tomatoes
  • 3 T. tomato paste
  • 1 tsp. salt
  • 4 - 6 c. coarsely chopped kale (stems removed)
  • 1 (10 oz.) package fresh or frozen cheese tortellini (not dried)
  • 1 c. heavy cream

Instructions

  1. Heat a large soup pot over medium-high heat.  Add sausage, onions, and garlic; saute until onions are softened and translucent, about 5 minutes.  Drain, if needed.
  2. Add chicken broth, diced tomatoes, tomato paste, and salt.  Whisk to fully incorporate the tomato paste.
  3. Bring to a boil.  Reduce heat and simmer, uncovered, for 15 minutes.
  4. Increase heat to medium-high.  Add chopped kale and tortellini.  Simmer for 3-5 minutes until kale is wilted and tortellini is tender.
  5. Reduce heat to medium-low.  Stir in heavy cream; cook until heated through, about 2-3 minutes.
  6. Season individual servings with salt and pepper, to taste.
TRACEY'S NOTES:
  1. You can substitute mild regular bulk sausage if you'd like. Italian sausage has a bit more spice, but they both taste delicious in this soup.
  2. If you buy sausage in link form, remove it from its casings prior to cooking it.
  3. Half-&-half can be substituted for the heavy cream, though we really do prefer heavy cream for its richness and role in thickening the soup.
