Our family just adores onion dishes.  Not just ones where onions lend a flavor-building base -- but ones where onions shine as the true star of the dish.  Some of our favorites are New England-classic boiled onions, straight-up baked onions, simple marinated Vidalia onion salad, and Southern-classic Vidalia onion casserole.

And we just adore this Cheesy Sweet Onion Bake, as well.

In this creamy casserole, chopped sweet onions are sauteed gently until tender and just beginning to turn golden brown.  They're then mixed with loads of tasty Swiss cheese, eggs, and 1/2-&-1/2 as a creamy base, and baked up with a simple Saltine cracker crumb topping.

The result is creamy cheesy deliciousness that lets the sweet onion flavor shine.

We use Vidalia onions as our onion variety of choice in this dish.  Living in North Carolina, Georgia-grown Vidalias are readily available to us all throughout the sweet onion season.  But other sweet varieties such as Walla Walla or Texas Spring can absolutely be used, as well..  

In a pinch if you don't mind a more pungent onion flavor, you could use regular yellow onions instead. -- The flavor of the casserole just won't be as mildly-onion.

To whip up a pan of Cheesy Sweet Onion Bake, start by chopping the onions.

You'll need 3 medium-sized Vidalia or other sweet onions, yielding 3 to 4 cups chopped.

Melt some butter in a skillet over medium-low heat, and then add the chopped onions.  

Medium-low heat is important here -- You want to gently and slowly cook the onions, which brings out their already-sweet flavor and makes it even more mild and sweet.

Saute the onions for about 20 minutes until they're tender and just beginning to turn golden brown, stirring the onions frequently.

Place half the cooked onions in a baking dish.

Then layer cheese and finely crushed Saltine crackers on top, repeating the layers with the remaining onions.

Whisk together a couple of eggs, some 1/2-&-1/2 (or whole milk, if you'd prefer), and a little salt and pepper.  Pour this mixture over the onion layers.

Top it off with a buttered Saltine cracker crumbs, and then bake it up.

Ingredients:

Sweet Onion Mixture:
  • 4 T. unsalted butter
  • 3 medium-sized Vidalia onions, chopped (about 3 - 4 cups)
  • 8 oz. (2 cups) shredded Swiss cheese
  • 1/2 c. finely crushed Saltine crackers
  • 2 eggs
  • 1 c. half-&-half or whole milk
  • 1 tsp. salt
  • 1/8 tsp. pepper
Cracker Crumb Topping:
  • 1/2 c. coarsely crushed Saltine crackers
  • 2 T. unsalted butter, melted

Instructions:

Prepare the Sweet Onion Mixture:
  1. Melt the 4 tablespoons butter in a large skillet over medium-low heat.  Add onions and saute, stirring frequently, until tender and beginning to turn golden brown; about 20 minutes.
  2. Place half of cooked onions in a lightly greased 8x8-inch baking dish.  Sprinkle evenly with half of the cheese and the 1/2 cup finely crushed Saltine crackers.  Top with remaining onions and cheese.
  3. Whisk together eggs, half-&-half, salt, and pepper.  Pour over onion mixture.
Prepare the Cracker Crumb Topping:
  1. Combine the 2 tablespoons melted butter and 1/2 cup coarsely crushed Saltine crackers.
  2. Sprinkle evenly over the top of the onion mixture.
Bake:
  1. Bake at 350℉ for 25-30 minutes, or until lightly browned and set.
  2. Allow to stand for 5 minutes before serving.
TRACEY'S NOTES:
  1. Varieties of sweet onions that work well in this casserole are Vidalia, Walla Walla or Texas Spring.  I always use Vidalia onions.
  2. In a pinch if you don't mind a more pungent onion flavor, you could use regular yellow onions as well. -- The flavor just won't be as mildly-onion.
  3. I sometimes use a combination of Swiss and Monterey Jack cheese, which is also tasty.
