Summer is upon us, and the 4th of July is quickly approaching.  Which has had me thinking lately about watching the 4th of July fireworks as a kid ...and how easy  it was for our family to watch our town's fireworks celebration.  Yes, we were very fortunate and truly couldn't have had it much easier at all.  All we had to do was ... step out on our deck!

Seriously.

No driving.  No schlepping of lawn or camping chairs to sit in.  No parking spot hunting.  And no waiting-forever-for-the-parking-lot-to-empty after the fireworks were over.

See, I grew up in a small town in Vermont that was pretty much a valley in the center, surrounded by hills on each side.  Our town's fireworks were set off from the car racing track {a small quarter-mile speedway that I loved  going to every summer Thursday night!} that sat atop one of the town's hills.

Just cut some large strawberries in half.  I like to leave the leaf cap on and just cut right through it ... the leaves act as a little 'handle' to hold onto when eating these tasty little bites.

And our house?  Well, it just so happened to be located on the opposing hill to the race track ... with our deck offering a perfect view of the gorgeous fireworks as they exploded over the treeline.

Watching fireworks doesn't get much easier than that, does it?

Now these red, white, and blue Strawberry Cheesecake Bites may not be quite  as easy as simply stepping out on the deck to watch the fireworks.

But they're pretty darn close.

To whip up a platter full of Strawberry Cheesecake Bites, just cut some large strawberries in half.  I like to leave the leaf cap on and just cut right through it ... because {one} it looks pretty, and {two} the leaves act as a little 'handle' to hold onto when picking up and eating these tasty little bites.

If the berry halves don't sit level, cut a teeny tiny slice from the rounded platter-side of the strawberry to give it a flat spot to sit upon.

Place the strawberry halves, cut-side-up, on a platter.

Then pipe on a bit of cream cheese-confectioner's sugar mixture and top with a couple of fresh blueberries.

How to cook Red White & Blue Strawberry Cheesecake Bites

  1. Place softened cream cheese, confectioner's sugar, and almond extract in a small bowl; stir until well combined and smooth. Chill for about 10 to 15 minutes.
  2. While cream cheese mixture chills, rinse strawberries and pat dry with paper towels. Leaving leaves on, slice each strawberry in half lengthwise and set aside on a plate or serving platter with the cut side up. {If strawberry halves do not sit level on the platter, cut a very tiny slice from the rounded side of the berry half to create a flat spot for it to sit upon.}
  3. Spoon cream cheese mixture into a piping bag {I use a disposable piping bag} fitted with a large star tip. {If you don't have a piping bag, you can use a zip-top baggie. Cut off one of the bottom corners of the bag and use it to pipe through.} Pipe cream cheese mixture onto each of the strawberry halves.
  4. Top each strawberry half with two blueberries. Serve immediately or refrigerate for up to about 3 hours.
